Cooking/Baking with Almond Meal

I discovered almond meal at Trader Joe's yesterday and thought I'd give it a try. Its basically ground up almonds and nothing else. I used it to coat cut up pieces of boneless skinless chicken breast (along with lots of spices) and baked them with some extra virgin olive oil . Very yummy and easily takes the place of white flour!

I was so pleased with the chicken nuggets, I then tried the ultimate test - using almond meal to replace flour in lemon cranberry muffins. Okay, so they aren't AS good as real muffins, but still a wonderful, healthy replacement with tons of fiber, good fats, and protein. For sweetness, I used honey, but you can also use agave nectar or a sugar substitute if you are into that.

    All I know is you use almond flour to make french macarons, which I think look delectible and adorible.

  • I actually picked up almond meal at trader joe's last week, myself! I used it to make almond cookies, and they came out delicious, with the texture of a macaroon like Nebb posted above!

    I sprinkled a few dried cherries on top before I baked them, because I love the almon/cherry combo. They were moist and a big hit at Easter.
  • I thought about doing macarooons as favors. I've never had one. But they are very cute.

    Ive never had one either but im absolutely dying to try them. I cant find anywhere in my city that makes them but I found a couple of shops in Toronto (an hour away from me) that do so I totally plan on searching them out in the near future.
  • Nope but I will now. I <3 TJs....we got mini pita pockets & sundried tomatoe humus yesterday which is oh so tasty & their fruit bran muffin mix also a big YUM :)

  • Mmm, macaroons. Not only are they really cute, but they taste just as yummy. I had no idea they were made with almond flour. I may have do these as favors as well :)

    Crnota, do you have the recipe for those cookies? They sound delicious.

    If anyone subscribes to Shape Magazine, their current issue (with Chelsea Lately on the cover) has three really good almond meal recipes. I'm probably going to try the chicken dumpling soup one.
