I just saw your post....here is the info I can give you...we had more than 5 stations because we added a sixth station ( a raw bar).  With the raw bar ( and probably without this, but for us the raw bar was a must!)  there was more than enough food! I am really not kidding when I tell you that people in my family who have been to a gazillion weddings have said that it was by far the best cocktail hours they have ever been to.  Also, please know that the quality of the food is amazing.  Unfortunately, my FI and i did not eat as much as everyone else but what we did have was amazing....prosciutto was the best I have ever had, fresh warm mozzarella to die for...the chinese station ( which sounded wierd but we went with it) was absolutely the best chinese I have ever had!  The other stations we got were the carving station which has three items: we had a roast suckling pig which was impressive along with a roast turkey and some kind of beef.  Then we had a station with gravlax, salmon, and caviar which was also delicious and came with frozen vodkas and my friends were basically all at that station.  Then we had the prosicutto ( italian ) station, and then we had a hot station with fried calamari, eggplant parm and sausage and peppers.  In addition to the five stations ( plus raw bar) they pass around a lot of stuff!  It is probably like 12-15 different things, and they are all very good..!
In answer to your question about timing, we had an hour and a half cocktail hour, but there will I am sure be an upcharge for this, but maybe you can negotiate.
For our dinner, we had a salad, a pasta course and then choice of three main courses.. Then we had a plated dessert, along with the cake and a mini-vienneese hour.  I have heard their main viennese is amazing, but we had to cut something out of the budget  so since we had the raw bar, we only had the mini-viennese which I am telling you was absolutely plenty and still very very impressive!!

Oh yeah we did not use the chapel, even though it is beautiful, I think it will be difficult for you to go take pics and still be there for the cocktail hour unless you have an hour and a half. You would have to talk to them to see what they recommend.  My FI and I did not to go to the cocktail hour, but we stayed in bridal suite and they brought us plenty of food. That was my choice though as I didn't want to be overwhelmed in there ( though I am having some small regrets about this!)  Let me know if you have any other questions.
For spring, I think that is a good price...are you on a saturday? It should be cheaper on Friday or Sunday!

    I just want to add that there is definitely enough food!  Definitely...As I was writing this, my coworker ( who loves to eat) is laughing...saying that if anyone left that cocktail hour hungry or unimpressed then there is something wrong with them!
    Now, I will add that I think Marina Del Ray and Villa Barone also offer a lot but there is a big difference and that is Presentation. Fountainhead presents everything really very very nicely....I love the different stations and I am not saying it is not like that at other places, but that was not the impression I got.
