Thank you cards for engagement gifts?

What is the proper etiquette for engagement gift thank you's?

My three aunts and grandparents bought me William Sonoma gift cards so that I could buy whatever we needed. I haven't used them yet.

1. When is the appropriate time to use the gift cards?
2. Any ideas of something really useful to purchase? We don't plan on using it until we are married.
3. Do I send thank you notes, and if so, should I wait until I buy something so I can tell them what I used it for?

    The cards were given to you as an engagement gift. I don't see why you could not use them now. 

    2. Any ideas of something really useful to purchase? We don't plan on using it until we are married. 
    This is up to you.  If you are indeed planning to register there, maybe it would be a good idea to hold off.  You may receive more gift cards as wedding gifts and could put them towards a large purchase.

    3. Do I send thank you notes, and if so, should I wait until I buy something so I can tell them what I used it for? 
    Of course you send a thank you note!  There is no reason to not send one and no reason to delay sending a thank you note.  If you don't have an item in mind, say that you are looking forward to using the gift card and completing your kitchen.  I would not delay anything thank you note at all though.

    Thank you for the helpful advice! I just recieved the gift on Christmas, so I will send the thank you notes ASAP!

    <div>Was your bill at the restaurant more than the amount of the Visa gift card?  I'm not sure if you know this or not, but with those types of gift cards the thing you're purchasing cannot exceed the amount on the card.  So, for example, if the card is worth $50 and your dinner was $75, the restaurant has to run the card for exactly $50.  Then you pay the difference of $25.  Let's say your bill was $45.  They would swipe the card as normal and it should work.  But, now there's only $5 left on the card so the next time you use it the place you're shopping has to run it for exactly $5.  </div>

    You always send a thank you note, ASAP, for any gift you receive no matter the circumstance (engagement, wedding, birthday, just because it's tuesday...).  "Thank you so much for the gift card!  FI and I can't wait to pick something up for our home.  It was so thoughtful for you to think of us and we're so delighted to have our family to celebrate this wonderful time with!"
