I'm from Chattanooga (about 2 hours from Gatlinburg)...I've stayed in cabins in both Gatlinburg and Pigeon Forge.  Unfortunately, I don't really have a recommendation on any of them...just know what you see is what you get. It's soooo pretty there, but many of the cabin rental places have theirs scrunched in really close to neighboring cabins- just be prepared for that. There are some cute shops and things in both towns...Old Tyme Photos, candy shops, etc. The best part for me is enjoying the views from the cabin- make sure yours has a balcony and hot tub!

There is a post from a few mo ago that has a huge posting regarding things to do in the area with links. I cant recommend a cabin specifically but if you are willing to look into a bed and breakfast, blue mountain mist is lovely and they have small private cottages available on their site.

My family has a timeshare there.  Make sure that you go up on the ski lift.  (It's not actually for skiing)  You ride up and can snuggle up with your new hubby :-).  Then you can look into the telescopes, take a few pics of the view, and ride back down!

legacy mountain resort has beautiful cabins with amazing views.  We've stayed at "What A View"  before...the cabin is cozy and a perfect honeymoon getaway.

I have traveled to the Gatlinburg/Pigeon Forge area numerous times and actually will be getting married at a cabin in October 2011.  Here are a few links that you may find useful and I am only recommending good cabin companies that are reputatable in my book.  Some may be more pricey but well worth it.  One thing to look for is the further you go into the mountain the more privacy you will get.  If the cabin is in a resort area you will have neighbors that could be close.

    I've booked through http://firesidechalets.com
and stayed in the Pumpkin Patch cabin, but it's pretty big just for two. That site has tons of listings though. The office staff was great (they basically list privately owned cabins for the owners) and they offer some deals and that kind of thing. The owners of the Pumpkin Patch brought us a huge gift basket of snacks, drinks, popcorn, etc., on our first morning.

I've also stayed at two different cabins for a friend's wedding back in August and they were booked trough Mountain Rentals of Gatlinburg: http://www.tn-gatlinburg.com/Default.aspx
