Wedding Woes

Help me with pulled pork

I've never made pulled pork before.  This recipe I have sounds super simple so I thought I'd give it a try.

It calls for a 3lb pork loin roast and says it serves 6-8.  Would you say this is accurate?  I'd like to have enough left over for another meal (I'd freeze it for later).

Am I safe in just sticking with the 3lb for the 4 of us or should I get a bigger roast if I want leftovers?

    I would make two tubes of loin for dinner plus leftovers, for three people eating.

    ETA:  I forget how many lbs. one tube is normally, thus the tube measurements.

    We've never done it with a loin. We get a shoulder (it's also cheaper). The shoulder feeds the two of us for about a week.

    Ok, thanks.  I was going to pretty much double the recipe but then I got scared that we'd have nothing but pork in the freezer all summer.  I guess we've got to have something in there to balance out the 24lbs of chicken breasts we have left, right? :)

    I'll stick to my original plan.

    Us, too. Much cheaper and the fat content means a nice, slow cooking won't render it dry and tasteless except for sauce.
