H and I are in rehearsals for a play right now and are trying to eat healthy and relatively cheaply. We like to make a big meal or two on Sunday that can be taken to work for lunches throughout the week.
We've gotten into a rut though and we have two more weeks of rehearsals! Do you have any favorite one bowl meals? Meaning, I can take one Tupperware container to work and reheat it and it includes all components. Not like a pork roast with a salad on the side. It doesn't have to be prepared in one dish, just served that way.
Here are our two favorites right now (they are clicky):
Cous-Cous and Feta Stuffed Peppers (usually I chop up the peppers and sautee them with the zucchini, so... deconstructed stuffed peppers)
Red Beans and Rice (I make this with a chicken andouille sausage)
One of my favorites:
Thai Curry Shrimp -I serve it over the coconut rice from Skinnytaste. SO GOOD! Unfortunately H is allergic to shrimp.

These are all pretty flexible, and it's easy to swap something out if you don't like a particular ingredient.
I also have been into cous cous with a piece of fish and some asparagus lately too.

I like it (and casseroles in general) because they usually have a good number of servings and can be easily packaged and re-heated throughout the week.
