  I am also having a wedding this fall in NC. We are going to do our own flowers. My colors are lapis, fern, and truffle...so it sounds like we are pretty similar. I leaning towards amnesia roses, calla lilies, and lamb's ear for my bouqet. The attendants would carry calla lilies.
  
  I also love mango calla lilies and terra cotta roses for a fall wedding.

  There are hydrangeas that are green & brown. Spider mums, carnations can be died.

  You can also get roses in any color.  They have beautiful champagne/light brown ones that I'm going to use in my bouquet.  Hydrangeas do come in any color you could wish for and are usually not so bright.  Calla lillies, tulips, & orchids are all good choices too with lots of colors to choose from!!  If you're on a budget, just remember some of these flowers will be out of season then!!

  chocolate cosmos! small beautiful flowers that will give just the right tone of chocolate accent.
  
  I agree with the amnesia roses, they have olive green petals on the outside and a exquisit lavender color on the inside.

  All ivory flowers.
  
  Mango/burnt orange flowers.
  
  Deep red/rust flowers. 
  
  A mixture of fall colors, like red/rust, burnt orange, deep purple, lavender filler (yes, lavender), and either skip or go very easy on the yellow-gold colors.
