Let's talk about food.

Again.

I'm going on a camping trip next week...if my husband is doing well. They just discovered an ulcer, but it's being treated, and he's doing a lot better than he was 2 nights ago.

I need meal ideas that aren't hard to prepare, don't use too many ingredients, and just any suggestions really of things you love to eat when camping or outdoors or whatever. We're taking a bbq with us.

This is what we have in mind thus far. Steak, potatoes on the bbq, corn on the cob. Macaroni salad - can be made in advance and left in the camper fridge (fridge is small, but works well). Pre-cooked ribs I pop and the bbq and slather some sauce on...same thing, bbq potatoes...

I'm looking for snack ideas really I guess, or your favorite pasta salad?

Also, we're going quadding, and on the trails we can't start a fire (usually we go with hotdogs and stuff). My husband will NOT eat cold food - any ideas on a hearty snack for the late afternoon?

  • Have you tried the lemon dilly pasta salad from epicure?  I made it for MIL's birthday and it was great.

  • How about chili?  You can freeze it and then heat it up there (I'm assuming you have a camp stove). 

    Will he eat veggies cold?  If so sugar snap peas are great.  Maybe some chips?

    Fajitas - make the marinate and let them soak in a plastic baggie. Then grill with sliced bell pepper, toss on a fajita, and you have an easy meal.

    EDIT: I couldn't tell if you were asking for meals in general or just snacks...obviously couldn't grill fajitas with no fire! :)
  • Beef jerky?  For the quadding snack anyway.  You could make your own trail mix or chex mix. 
  • You could make your own trail mix with granola, nuts, dried fruit, and M&M's. Or you could skip a step and just buy Kashi bars.

    If I were quadding all day (or four-wheelin'/muddin', as I would call it) I'd probably just take a jar of PB and a few spoons.

    Those aren't technically cold, I wouldn't think.

    I love the fajita idea.

    And yes, Georgia, definitely muddin'. A couple weeks ago we sunk the rhino - pretty much literally. Had to get towed back...we hit a hole, got water sucked in the air intake. Fun times.

    Bruschetta
    Pre-cooked scalloped potatoes
    Smokies
    Burgers
    Pot salad
    Stuff to make nachos, that would cook easy on the bbq on a baking sheet, just watch them to make sure the cheese doesn't burn
    Coleslaw, but use french dressing instead of coleslaw dressing.  ZOMG so good (if you like french dressing of course)
    Homemade munchie mix - i do pretzels, goldfish, chex, asian rice crackers, maybe so peanuts
    GOODIE RINGS!!!  BEST STORE BOUGHT COOKIE - EVAR!  (they also remind me of camping because we always bring them)
    Chocolate covered almonds
    Gummy coke bottles

  • Have you ever done foil dinners? It sounds like you might have dinners figured out, but it's still good.
    And as far as snacks go, anytime J and I go out, I always take Muscle Milk bars. Full of protein, and filling - good amount of calories.

    If you're interested:
    On a large piece of thick foil:  Layer thin slices of potatoes, then carrots, then onions (between each, put a little butter, salt and pepper). Make a hamburger patty (a little larger than you would make for a burger - place it on top of the onions. Sprinkle with Worcestershire, ketchup, mustard, salt, pepper. Then, do another layer of the veggies, but backwards, ending with the potatoes. Make the foil into a tight packet, with no holes. You may need to wrap another piece around it the other direction, but keep the seals on the same side. You can toss it in the fire, or put it on the grill. You can also leave out what you don't want (obviously, a gravy forms with the onions and carrots and the meat juice). It takes between 45-60 minutes to cook I'd guess. You can also make it in a casserole dish at home and just put foil on top and cook it in the oven at say 400 for 45 minutes or until the potatoes are tender and the meat's cooked through.
    You can also sub chicken, fish, etc.

  • Could you make/bring some granola bars? What about small pieces of fruit like apples and oranges?

  • Caprese Pasta Salad
    make/boil whatever pasta shape you like in a salad, drain and cool
    add: cherry tomatoes, julienned basil, diced fresh mozzarella
    toss with a splash of good olive oil and a dash of balsalmic vinegar
    add salt/pepper to taste
