Tropical Honeymoon w/ Non Water Entertainment

My Fiance and I are both very active and want to take our Honeymoon somewhere tropical. Our Problem- He can't swim well and does not feel comfortable in the ocean. So Snorkling and Scuba Diving are out. We still want to hang out in the sun on the beach- but would like more non-water entertainment. We have already done ATV tours, Dunn Buggy, and Zip Lines on previous Vacations.

Are there any tropical honeymoon locations that you know of that will include non-water activities that we can do. We don't want to get bored after day 1.

We stopped in St Lucia (in the Caribbean) during a cruise last January and LOVED it. We are seriously considering going back there for our honeymoon so we can spend more time. Definitely our fav of the 5 islands we stopped at. It's gorgeous there and they really seemed to have a lot to do. I unfortunately don't have a lot of information about it since we only had one day there, but I know that one day definitely made us want to go back for more.

Puerto Rico is great!!! There is Old San Juan, where you can shop around and look at some awesome old architecture (El Morro, for example), eat awesome food, and feed pigeons in a park (one of my favorite places as a little girl...who am I kidding, it still is!). There is great night life and dancing too!
For the more active side, there is hiking in the rainforest (El Yunque National Rainforest), which is my favorite place on earth.
There's Bacardi tours and soooo many other things I can't think of right now that don't involve the beach. Lots of resorts have awesome pools too (that aren't very deep-I can't swim either!).
    Sooo yeah!
