Just eating it was my only answer. Ive never cooked pineapple before. You could bbq it but thats reall yjust the same as "just eating it".

Grill it! I love grilled pineapple - maybe add some peppers, onions, etc. to the mix as a nice side to a protein.

Oooooh, I made this really really good pineapple "salsa" once. The recipe called it salsa, but it wasn't very salsa-y to me at all.

You can ignore the jerk chicken part, and the salsa part is somewhere near the bottom I think. But the jerk chicken was really good too.

Oh and another thing I did a few weeks ago was caramelize some pineapple rings. I put some brown sugar in a mesh strainer and sprinkled it over the rings (didn't want to add a ton of sugar to something already really sweet, hence the strainer) and did it under the broiler on high for about three minutes. Really good with pork loin.

You could grill it with a chicken breast and put it on a kaiser roll. Then mix together seasame seeds and mayo. Quite the treat!

Grilled Salad:
Grill pineapple slices, tomato slices, red pepper strips (or green pepper if you want), onion strips, mushrooms. Toss with some italian dressing on some spinach.

Grilled Chicken Sandwich:
Marinate chicken with this marinade, then grill with pineapple slices. Put on good bread along with whatever else.

Dh's family cuts into slices, sprinkles with cinnamon and grills them. Delicious.

Or cut into chunks and serve along with other veggies and meat on a skewer shish-kabob style.

You could use it as garnish for pina coladas, but you'd have to drink a lot of pina coladas to get through the whole pineapple!

I'm gonna go hogwild on fresh pineapple when were in Hawaii for the wedding. I love fresh pineapple, and what we get here is good, but probably not great.

Hawaii has amazing pineapples, too! Are you going to Maui? There's a winery there that makes wine out of pineapples instead of grapes. I very much recommend it. Sadly, when I was in Maui I had just had major dental work and couldn't eat too many fresh pineapples- the acid really hurt. Oh well, I'll just have to go back!

Cut into pieces and put pieces on a cookie sheet or tinfoil. Sprinkle with coconut and a bit of brown sugar. Drizzle with rum. Broil. Yummmmm.
