Snarky Brides

Anyone want to talk food/recipes?

I'm in a bit of a food rut.

It's so frickin hot and humid here that I really, really do not want to be standing over a stove or having an oven heating up the house.  I've instituted "sandwich night" to get a reprieve from cooking one night a week but I'd love new ideas.  Any meals that are great cold?  Salads won't fly at all as a meal for my H (I eat them for lunches) and I need it to be gluten free.  I'm at the point where corn chips and salsa sound like dinner to me and my H can just fend for himself.  ;)

Ideas?

  • I know you said GF, but I don't know much about that. Can you have any kind of pasta? I have a pasta recipe that uses rotini, hard-boiled eggs, snap peas (or snow peas, can't remember), radishes, and something else I can't recall that you eat cold.

    I don't know it off-hand (all my recipes are from magazines and on paper, it's annoying) but can get it to you tonight if you want.

    I've been known to eat celery w/salsa and call it a meal so I know where you're coming from.  Last night all I had was cauliflower and refrigerator pickles.  The phrase "too hot to eat" gets used down here a lot. 

    I'll often only cook a protein and the rest of our sides will be cold.  Or I'll cook extra sides when I do cook and use them all week.  We eat a lot of squash.

  • What about chicken salad? We eat them on tostada(store bought to avoid frying).

  • I have a couple things that are at least additions to meals: (these aren't online recipes, just family recipes I love)

    Marinated salad:
    One cauliflower head
    One broccoli bunch
    Noodles 
    Bottle Italian dressing
    1 Tbsp Salad Seasoning (this is key)
    Optional to include: 
    pepperoni's
    crab pieces

    cut up cauli and broccoli, mix everything together. tastes better after it marinates for a day or so.

    The other one is to cut up a container of strawberries, and combine it with:
    Large container cottage cheese
    container of cool wHip
    and one packet of strawberry jello

  • How about a turkey pastrami reuben? Pastrami turkey, saurkraut, thousand island dressing on some [gluten free] bread (if there is such a thing)?

    Oooo, I do rice bowls too. Something like THIS but I like to add a green vegetable of some sort (broccoli, kale, asparagus, whatever) and a poached egg on top instead of tofu, because I don't like to eat much soy.

  • I made a modified version of  this asparagus, quinoa, and feta salad the other day and have eaten it for lunches. It's excellent. I think it would be meal worthy with some chicken added. 

    I am planning on making a whole bunch of chicken breast in the crock pot and shredding it soon. This way I'll have meat to use for chicken salad and in things like this.

  • These Feta Stuffed Chicken burgers are AMAZING, WW friendly, and very filling!!  They also happen to be super easy.  I didn't think I would like them because of the feta, but it tastes really good melted.  Seriously, we've eaten them 3 times in the last 2-3 weeks, and I have two frozen and ready to go in the freezer. 

    The pepper, olives and lettuce on top are also optional if you don't care for any of those. Personally, I ususally leave the lettuce out because I never have it in the house.

    As far as gluten free, I'd assume you have a GF hamburger roll you use?  They would also be just fine without a roll.
