We are thinking about not keeping the top tier of our wedding cake and serving it at the reception... I just wanted to know opinions on this. Is the cake still good a year later or is it freezer-burnt?
I have yet to meet someone who waited the full year and said it was still good. We'll be looking for a baker who will include a small cake for our 1 year anniversary.
We didn't keep it. The cake was cheaper because we just ordered enough for our guests. We still had some left over and froze a few slices, but they're already gone - well before our anniversary. We'll likely just get a small cake in one of our flavors for our anniversary.

We aren't keeping ours. Honestly with my sweet tooth it would probably be gone well before our 1 year. We plan on ordering a mini cake in one of our flavors for our one year. None of the bakers I have considered include one.

We got married in November and cut into our top tier on Valentine's Day 3 months later and it was delicious. We attempted to carefully re-wrap it but when we cut into it again in November, it wasn't great. I think if we had not cut into it early and just saved it for our 1-year anniversary, it would have still been good but can't say for sure.
We are going to get an anniversary cake from our baker, but my sister kept hers for a year and it was decent, just not nearly as good as it was at her wedding.

I am definately not saving mine for a year, i never have room in the freezer as it is lol And that seems like it wouldn't taste very good. I'll just save whatever is left and eat it when we get back from our honeymoon :P

Two, everyone that I've talked to forgot to eat theirs on their anny, forgot to thaw it for their anny, and/or it tasted terrible and was disappointing (not something I want to experience for our anny)
Three, (the biggest reason) we're not having a traditional cake. What we're having would be ridiculous to try and save. (it's a big secret and can't risk a leak so y'all will have to find out after we're married)
I had some of our wedding cake a few weeks ago. It was six months old, and tasted phenomenal. My mom had wrapped it tightly with saran wrap, and our anniversary cake is wrapped tightly too. I think that's the secret - wrap it up!

My sister worked at a baker for years and he always told the bride and groom not to save the top tier because it was a waste of the cake. He would include a cake on their one year anniversary in the price. A much better idea, IMO.

Not keeping it because 1) we might just do a 10in cheesecake to cut into (getting one at the cheesecake factory and decorating it myself) if we do 2 tiers I have to stack it myself and that is just a pain to repack once defrosted. Therefore FI and I will go buy a slice or two on our one year anniversary of the same cake and chow down LoL
Our baker bakes a seperate cake decorated the same way that she brings to the reception already wrapped, but the others we talked to offered to bake another anniversary cake.
I planned to keep ours, but I didn't realize how big it was going to be! We took it home, but I had family visiting and didn't get around to trying to pack it until like 4 days later. I was planning to just keep a slice or 2 since it was huge (like 10" diameter and 5" tall!) and we would never have that much space in our freezer. But we ate some of it and it already tasted old and kind of gross. So we ate some and tossed the rest. It was kind of a waste, I wish we had just eaten it the next day or something.
So if you do plan to do it, make sure you do it quickly! I think we'll just order a small anniversary cake.
I used to want to do this until I read several stories and talked to a few of my married friends, and nary a good experience with this. I'm sure there are exceptions, but I don't want to cut into a freezer-burned cake on our 1-year anniversary. Our baker offers a replica top tier for 1-year anniversaries included in the cost of your cake, so I am happy with just doing that.
I dont plan on freezing mine as I makes cakes for a living and I am making my own cake and will just make a replicate for our anniversary.
I have had a few brides freeze their top tier and tell me that it still tasted just as good a year later. It depends on how good of a freezer you have and how well you wrap it. the regular freezer on top of a fridge is usually not good enough because its small and is constantly opening and closing causing a greater chance of freezer burn. If you do choose to freeze your top tier my advice for wrapping it is
- put it in the freezer or fridge for a few hours to let the icing harden
- wrap it in 2-3 layers of cling wrap
-put it back in the cake box or in a plastic tupperware
-cling wrap the container 2-3 times.
When you want to thaw and eat it, let it thaw in the fridge slowly for a few days still in the saran wrap, a few hours before eating it let it warm up at room temperature. if its a fondant cake keep the saran wrap on until it is done "sweating".

My sister did this for her 1st anniversary, and it was HORRIBLE. If Im not mistaken, she has since gotten a mini replica of her cake. Which is EXACTLY what I shall do! We'll be saving ours for our honeymoon!
We served ours the next night to friends still in town (we had a DW). I can't imagine freezing and eating it a year later... There is NOTHING in my freezer that I'd want after a year. Gross
My brother and SIL froze theirs and ate it on their anniversary and said it still tasted good. And I've heard one other person say the same. In both cases, they wrapped the cake a lot. Layer after layer of seran wrap followed by foil followed by more seran.
We're going to attempt. But I may order a replica just in case. If the frozen cake is fine, then we'll just have extra cake.
We are doing cupcakes instead but if we were to do the cake thing, the baker near us does a free 6" round cake for your 1-year anniversary if you book with them for the wedding so you don't need to worry about freezing it.
Knowing my fiancé and I, we will probably eat it when we get back from our honeymoon. We don't have the space or the will to keep it for a year! However if packaged properly, it should taste fine.
I bake cakes myself, so I will probably make us a cake on our wedding anniversary!
Ours was included in the price (though, looking back, I realize I could have ust ordered that cake for that many fewer people), so we have it in our freezer. We went on our mini moon right after the wedding, so I had a friend who had recently gotten married freeze it for me, following the directions from the baker. I also asked her to cut it in half and wrap it separately so we could thaw it half at a time. Haven't eaten it yet though so I don't know how it will taste.
I just went to a one year anniversary party this past weekend, and the baker wrapped and re-wrapped the cake and container in all kinds of layers of saran wrap and foil, and it was still gross.
We've decided that we're taking the top layer with us on our honeymoon (road trip from Ohio to a timeshare in Orlando). If we're paying for it, I want to eat it while it's still guaranteed to be good!
