    Feta cheese and sundried tomato & oregano dressing makes my salad less bland ;) I actually look forward to it now! Peppers help a lot too!

    Seriously, for those of you who have a hard time losing that weight, try Paleo.  It's rather drastic at first, and you all have heard me be a total bitter skeptic about cutting out delicious carbs, sugar, and cheese, but it does work.  I follow it VERY loosely, and I've lost 12 pounds since New Years (as of today... it has ranged from 10-15 pounds the last few weeks).  And that's really significant - around 8% of my weight!  I don't have a ton of weight to lose.  I went from a size 8 to a small size 6, just a bit too big for a size 4.  Seriously!  Since New Years!!!  I'm fitting in clothes I haven't fit into since high school.

    Check out Primal Blueprint... it's a bit more manageable than Paleo because it allows dairy, but the concepts behind it are the same and very good.  They're not about losing weight, it's about giving your body the fuel it needs naturally.  I have had SO much more energy, my skin has been totally clear (and I've battled acne for almost 10 years now... not a single pimple for 2 months!).  Seriously, check out Primal Blueprint and follow it loosely.  You can still cook semi-normal things, just with small adaptations.  For example, we use almond flour instead of normal wheat flour to bread chicken.  Tastes even better, and it's more filling.  You don't have to survive off boring salads - how does chicken breast grilled in almond flour in a marsala wine sauce with roasted garlic with artichoke hearts and crimini mushrooms sound?  Or slow roasted beef bourginon in a port wine sauce?  Or coconut shredded chicken in lettuce wraps (my personal favorite)?

    Okay, I know i sound like an infomercial - but seriously, if you're interested, check out the "Primal Blueprint" book at a bookstore.  I'd love to have some other people doing it, too!  I've got some AWESOME recipes!

    I don't want a diet that restricts me in anything but calories. I lost 11 lbs in a month just doing that and exercising so I don't see the point in going through the hassle of a very restricting diet. The biggest thing for me is sticking to it.

    To gain muscle you have to eat lots of protein (think protein at every meal and in-between) and lift weights until your arms/legs fall off 2-3 days a week. 

    This goes for anyone.... over or underweight. It's tough, and not a day goes by when I'm not sore. But it is working. If I can do this, you can do this!

    That's fair - it's one reason I really liked Weight Watchers.  I say this about Paleo/Primal from more of a holistic health standpoint.  Better skin, more energy, and a longer life, not just a number on the scale.  What can I say, I'm a convert (mostly - I still cheat when I feel like it).

    We eat hormone free, antibiotic free, vegetarian-fed meat & eggs now. The science behind the amount of corn in our diets is rather frightening - basically, our systems just don't digest it that well, and it causes lots of problems.  Same goes for most dairy.  We as North Americans also eat a lot more grains than our bodies need.  Watch Food Inc. for some of that information, but there are a lot of books out there, too.

    As someone who wants to be a parent someday, reading all the research on the foods we eat and how it can affect our offspring even years later is frightening.  Just eating the cage-free, vegetarian fed chicken eggs made me see the difference in how what a person eats effects its procreation process - the eggs are tastier, richer with vitamins.  I know it's sort of creepy to compare my eggs to those of a tasty chicken egg, but I couldn't help but think what I ate affected what's in my body, too.  It might be too late to undo 25 years of McDonalds and Taco Bell visits, but I'm certainly going to make the effort to see that what goes into my body in the next 5 years or so until I have my children is the best quality possible.

    I've been sick for about a month straight, so needless to say I haven't been doing that well at all.  :(  I finally went in and got some antibiotics and a steroid shot, so I'm hoping by the weekend I'll be able to start walking and jogging again in the evenings. 

    I also have to share the kitchen with my mom (living at home until the wedding), so that makes healthy cooking a little more difficult...  my mom is starting to lean towards healthier cooking, but in general she doesn't cook very healthy.  and I'll admit, if there is extra food it's so much easier to just snack on that at the end of the day, rather than cook my own meal.  :(
