Cityplace is saying this menu doesn't lend itself to a sit-down dinner and is now suggesting we not offer 100% seating, which I (and my coordinator) find ridiculous. They do have me worried that it's not enough food. Thoughts?

So, our coordinator recommended maybe adding one other station, but I really feel like that's going to be plenty of food... maybe not enough vegetables or sides, but lots of food.

I think you have lots of vegetables! We also did a mashed potato bar and it really is a big hit with people. It might be a good option to balance out your meat.
Your menu is somewhat similar to ours, with the carving station and action station but we did 3 hot and 3 cold hors d'oeuvres.
I would do maybe a couple more appetizers, unless this is close to dinnertime then maybe something a little heavier.
ETA: I do have to say I understand where they are coming from with the seating comment. When I see apps and stations, I see people milling about...
I'm not so good with the advice... Can I interest you in a sarcastic comment?
And as for the seating - I think you and your coordinator are totally right. Every person needs a seat. I definitely wouldn't want to be forced to eat my Cityplace Salad standing up!

Edit: I think we're looking at serving dinner around 5:30-6:00, with the reception ending at 8:30.
