NWR- Farmer's Markets and a?

Hola ladies.  I came across this today and thought I"d share it, since it's perfect Farmer's Market season!


Also- anyone have some delicious, healthy summery recipes to share??

    I am not much of a cook, so I don't have any good recipes to share. But I love the farmers market! The one in the minneapolis was so much fun to walk through and get fresh veggies!  And I am heading to the farmers market in Mankato tomorrow. :)

    This is my favorite summer salad recipe - courtesy of Ina Garten.

    I will typically throw in some chopped peppers too.

    Caprese Salad is another of my summertime favorites.  (I cheat and use balsamic on mine which isn't "authentic" but it sure is tasty!)  Slice up 2 ripe tomatoes and a ball of fresh mozzarella.  Alternate them in a round (or rows) on a plate.  Thinly slice up some fresh basil and spread over the top.  Sprinkle with a little salt and pepper and top with olive oil and some good quality balsamic vinegar.  So good.  I could eat a plate of that on its own!

    Another good book to read is the St. Paul Farmer's Market cookbook!  They arrange it by ingredient so if you find yourself taking home Bok Choy and don't know what to do with it, you can find that chapter and get some ideas. Love that book!!

    FI has been really wanting to try the food trucks on Nicollet Mall lately. We have yet to hit the farmer's market this summer, I might make a trip on saturday. I always like to melt dark chocolate and slice up a variety of fruit to dip in it (bananas, strawberries, those canned mandarin oranges).
