  • 1) favourite vegetarian meal (im considering dairy to be fine, though for some it might not be)  I'm going with Black Bean Soup or Mushroom Meat.  They are both pretty tasty.

    2) What do you think when you hear "vegetarian meal"?  Honestly, I think of Lent.  I don't like going to fish frys every friday, so I usually I make a vegetarian meal.  This past friday I made lentil tostadas.  They were awesome.

    3) vegetables you cannot/will not eat?
    I honestly can't think of one.  I eat pretty much everything.  I'm a human garbage disposal.

  • 1. Risotto. The best I've ever made had butternut squash in it, but I'm itching to make the smoked gouda and mushroom recipe poli shared last night.

    2. I usually think of the awful things you get offered at big events: cheese lasagna or mushroom ravioli

    3. I just haven't gotten my head around eggplant. I've tried. I've won cooking competitions making it. But I just don't like it.
  • 1. The tapas place near me makes an amazing bruschetta with goat cheese and caramelized shallots.  If it has to be a full meal, I'd say something with grilled portabellos or eggplant, like a panini or pasta.

    2. Eggplant parm, veggie lasagna, or in really bad cases just grilled vegetables.

    3.  Anything canned, collard greens, brussel sprouts, peas, baby corn, water chesnuts (are they a vegetable?), uncooked tomatoes, pickles.  Some of those are preference, but I will actually eat them if I don't have another choice, but I WILL NOT eat baby corn or pickles.

    1.  Probably veggie lasagne

    2.  Pasta or rice.

    3.  Depends on how they're cooked.  I really prefer raw vegetables.  I HATE tomatoes.  Hate.  I pick them off of burgers and sandwiches and salads.  Lettuce isn't great for me digestively, but I'll eat it.  I'm not a huge fan of cooked peppers.

    I had some that were edible once, they were broiled or baked. Not delicious, but edible.

  • 1) favourite vegetarian meal (im considering dairy to be fine, though for some it might not be) - fresh cut veggies (tomato, radish, cucumber, bell pepper), crusty bread, feta, and hummus. Yes, that sounds like an appetizer, but its a meal at our house at least once a week.

    2) What do you think (what dishes) when you hear "vegetarian meal"?
    Lentils, eggplant, salad, some sort of bulgar or quinoa dish.

    According to my allergist I am allergic to green beans and celery. That's fine by me. I have a hard time with mushrooms, especially button mushrooms because one time I had one squeak on my teeth and it creeped me out. I know, I'm special. I am getting along with creminis and portabellas (same thing, I know) now, though.

    I also don't like slimy roasted peppers. Grilled is fine, slimy with no skin is not.

    Nothing specific- I have many vegan friends so I usually think of them, I guess.

    I'm not a fan of lima beans, but I like edamame. It's weird.

  • Edamame =/= lima beans at all, so I don't think it's weird. I also like edamame and not limas, though I never get to eat them because FI isn't supposed to have edamame so I just don't bother.

    Oh, I love them, steamed, broiled, baked, braised, or fried. As long as they aren't overcooked, they are quite yummy. I prefer broiled because they get sweeter.

  • 1) favourite vegetarian meal (im considering dairy to be fine, though for some it might not be) this is hard.  since i eat lots of veggie meals.  ummm... probably veggie paninis with havarti, fettucine alfredo, mozza sticks, grilled cheese, mediterrean pizza.... yeah lots. 

    2) What do you think (what dishes) when you hear "vegetarian meal"? i think eggplant parm. 

    3) vegetables you cannot/will not eat?  i'm not big on brussel sprouts, saurkraut (not sure it's considered a vegetable at the saurkraut stage, but still), zucchini is not my fave but i'll eat it IN stuff, i also don't care for bok choy.  I love almost all vegetables though.

    I don't know, some weird combo of veggies I've never heard of. I don't know many vegetarians.

    Not a fan of zucchini or a lot of squash and eggplant, but I only really dislike them if they're overcooked and mushy. I like most veggies if they're still a bit crisp.

    Confession: I really love canned asparagus and pickled beets (as long as the toxic  red juice doesn't get all over my other food). I blame my dad's family. I actually like cold canned asparagus more than most fresh asparagus. I know, I'm weird, flame away. I've always been that way and don't know why.

    3.  None - I like them all.  Especially grilled - sliced into the grill basket and spritzed with spray-on italian dressing in the little pump bottle.  And brussel sprouts are definitely a favorite too, Shelly.

  • 1) favourite vegetarian meal (im considering dairy to be fine, though for some it might not be)   Cereal and milk??? Cottage cheese with pineapple and cheddar cheese with sunflower seeds maybe. I also like a good tomato and cucumber sandwich with mayo.

    2) What do you think (what dishes) when you hear "vegetarian meal"? a pasta with meatless sauce; tofu; beans (love)

    3) vegetables you cannot/will not eat?  I can't "do" lettuce any more; fresh mushrooms; canned asparagus - but I love fresh; and I have yet to have eggplant that I really liked. Oh and - I'm not a fan of collards/mustard greens/etc.

    To answer the poll: Um, I will seriously eat almost everything if it isn't meat. (Except mint.) I'm not a huge fan of beets, I guess. FI hates them, so it is a non-issue. He hates other things I like, such as fennel and brussels sprouts, which sucks. I'm not a huge fan of steamed, mixed, generic veggies, or of cooked greens, unless they are very lightly steamed. But I'll eat them.

  • Msmery, my little brother was a huge veggie fan when he was younger (still is, actually). My mom has photos of him from when he was a baby with slilghtly orange skin (from gorging on carrots) and lightly tinged purple skin (from gorging on beets). It's hilarious :)

    For anyone going !!!!!!, it's pretty normal for babies to have their skin change color slightly if they eat a lot of veggies. It's harmless, as long as they get a balanced diet. He was also almost 3 months premature, so his skin was pretty translucent.
