Soo... I'm a florida/beach bride and plan to get married at the end of September... (which shouldn't be too too hot) I really want to make these super cute starfish/sand dollar white chocolates as my favors/place tags but I'm worried they may melt while outside. Any suggestions/ideas..

Maybe you should do a test run. Keep them in a cool, dry, dark place until time to put them out. Maybe you could freeze them and that would allow them to thaw during the reception but not melt? I think a test run is in order.
The only problem I see with the freezing is when they start to thaw, condensation is going to appear.
