What do you do with a fresh artichoke?

I was at Trader Joe's and they had fresh artichokes and I bought one on impulse.  I love artichokes in things, but have never used a fresh one.  Anyone have a good (healthy) recipe?

    I looooove artichokes.  The "stem" is actually an extension of the heart, and also good to eat, so you don't need to cut that off.  To prepare it, I trim the top, the pointy part, down about an inch or inch and a half depending on how big it is, then use my kitchen shears to trim the sharp points off of the other petals.  I place about an inch of water in a pot and add some lemon juice (I don't measure, but probably a tablespoon or two), bring the water to a simmer and place the artichoke, cut side down/stem up, in the water.  Making sure the water doesn't get down too low, let it simmer 40mins to an hour or until you can pull the petals off.  The closer to the center, the better they taste, I don't dip mine in anything.  Skip the part in the center that looks like hair, that's the "choke", but the parts around it are the "heart" that's the best part.
