    I <3 Perogies... Fried and smothered n caramelized onions with sour cream or apple sauce!!.... mmm and that shall be my dinner...

    My Monday is almost over... 1 more hour of work! Yippee!!

    Wow, I've learned a bunch of new ways to eat pierogies. I always just cook them in my microwave steamer.  If they're the potato & onion kind, I eat them with mustard. I eat the potato & cheese kind plain. They're one of my go-to quick snacks.

    I love perogies. They are fabulous. There is a restaurant here that serves them. I want to go.

    ETA: when all ya all say they aren't healthy- it must be in the way that you prepare them. I swear the last time I got them frozen from the grocery store they had a very nice looking nutrition label. One that had minimal fat and calories on it.

    I've bought them at both Walmart & Smith's.

    My Monday has had it's ups and downs.  Today is FI's birthday, so that's definitely an up.  However, he's been having some car trouble lately and found out this morning that the repairs are going to be $1700 and will take 2-3 days (guess it's a good thing I'm not working right now so he can take my car to work). 

    I'm going over in a couple hours to pick FI up and bring him back to my house where I will cook him some cubed steaks, gravy, rice and corn (one of his favorite meals) and a cheesecake (ok, I "cheated", it's a no-bake that I found on an amazing sale).  So that should help make up for the rotten day we've had.

    My day just got an awesome bright spot:  

    One of my good girlfriends from college text-pic messaged me a photo of her engagement ring!  Her and now FI have been together for a little over 4 years now (since our senior year). Fun fact: I introduced them! Her FI and I went to high school together and have always been close (we dated for like a month or whatever when we were in 8th grade LOL). They are so great together and I'm super psyched!
