New-ish Knottie! Love Eating Well.com!

Hi everyone!
I have just about 2 years to my wedding, so I have plenty of time to rid myself of some extra "grad school" weight that I have put on. But, I have been looking to finally get myself in the shape I want, anyways.

I am a huge fan of Eating Well magazine and their website. You will find their recipes are SO DELICIOUS and filling. Plus, they are nutritionally sound. They give you the nutrition facts with every one.  Plus, they have a whole section dedicated to 500 calorie dinners.

  • One of my favorite recipes from there is a quesadilla with carmelized onions.  I don't have the link any longer since I have made it so many times.  You can add or subtract whatever you like to it.  I use carmelized onions, shredded rotisserie chicken (breast), spinach, mushrooms and sometimes a mango salsa.  On the side I serve a sour cream spread that is made of 1/2 cup low-fat sour cream, 1TBSP of honey and a squirt of lime juice all mixed well.
