Help me plan our weekly meals!

Hi ladies, I've been traveling all week, H has been studying a lot so we haven't meal planned in awhile and I'm stuck. 

We're having spaghetti and meatballs tonight, and I need something meatless for Wednesday and Friday but we don't generally do a ton of pasta (tonight will hold us over for a few weeks). 

Healthy, delicious ideas for us? What are you guys eating this week?

  • Bean burritos, spiced quinoa, tofu sausages and peppers.  that's what we're having this week, among other things.  FI isn't a vegetarian but I'm a semi-veg (pescetarian; will eat fish, and the occasional BBQ, it being Kansas City and all) and I have a tendency to drag him along, lol.  Fortunately he doesn't mind.  :)
  • I love tilapia and that's usually my go to for Lenten fridays.  I'll do veggie pizzas a lot too.

    Random: We're having meatlballs and Spaghetti [squash] tonight too! 

    -Lentil style chili in the crock pot? That's super easy to throw together and let sit for however long you need it to. 
    -Or just any meatless chili.. 
    -Corn Chowder.. 
    -Beer Mac and Cheese (or any Mac and Cheese... lol.. but that's heavy carb I suppose) 
    -Tuna Salad Sandwiches (if that doesn't count as a "meat" for you) 

    Oh man I made a "mashed potato" fake the other night with Lima beans.. it was amazing.. and so much better for you than mashed potatoes.. mmm.. 
    Speaking off.. 

    -Baked Potatoes (since that can be a full meal by itself)
    -Seared Scallops and.. uh.. anything.. because Seared Scallops are awesome :o

  • This is a no noodle lasgana that is really good and I am trying to cut out pasta and carbs so this works.  I got it from Weight Watchers so it is not as fatting either. 

      

    5 spray(s) cooking spray, divided   

     1 medium eggplant(s), trimmed, sliced lengthwise in 1/4-in thick slices   

     2 large uncooked zucchini, trimmed, sliced lengthwise in 1/4-in thick slices  

     1 large egg(s), beaten   

    3/4 pound(s) part-skim ricotta cheese   

    1/4 cup(s) basil, fresh, cut into thin strips   

    1/2 cup(s) grated Parmesan cheese, high-quality recommended, divided   

    4 cup(s) store-bought marinara sauce, divided   

    1/2 pound(s) shredded part-skim mozzarella cheese, divided   

     

    Instructions

     To roast vegetables, preheat oven to 400°F. Coat two baking sheets with cooking spray. Place eggplant on one prepared baking sheet and place zucchini on other prepared baking sheet; coat vegetables with cooking spray. Roast 8 minutes; turn over vegetables and roast for 7 to 10 minutes more (total roasting time should not exceed 20 minutes or the vegetables will get too mushy); remove from oven and set aside.

     Meanwhile, in a medium bowl, combine egg, ricotta cheese, basil and 1/4 cup Parmesan cheese; set aside.

     When vegetables are done, reduce oven temperature to 350°F.

    To assemble lasagna, coat bottom and sides of a 14- X 8-inch baking dish with cooking spray. Spread a thin layer of sauce (about 1/4 to 1/3 cup) on bottom of pan. Layer eggplant over sauce (use all the slices, even if you have to overlap them). Cover eggplant with half of marinara sauce and then spread half of ricotta mixture on top; sprinkle with half of mozzarella cheese. Top mozzarella cheese with zucchini and cover zucchini with remaining marinara sauce; spread with remaining ricotta mixture and then sprinkle with remaining Parmesan cheese.

     Bake until the bottom starts to bubble, about 35 to 40 minutes. Remove lasagna from oven and allow it to rest for about 15 to 20 minutes before slicing into 12 pieces. Yields 1 piece per serving.



  • Lent can be hard for me because I don't eat seafood and I don't want to always eat pasta.

    I do like tuna though. Tuna melts can be SO good. I especially love it when there are tiny chunks of green apple in them.

    And I was forced to try King Crab leg this weekend and I have to admit it was actually pretty tasty. Although it's a little pricey.

  • Hmm, never had tuna with apple in it!!! Will have to try that, give a change up to my Friday lunches. Bean burritos or veggie curries could be your friend? We try to stay away from a lot of pasta (and lets be honest, while delicious, I can't eat that much cheese pizza either) so it can be challenging to come up with good stuff!

  • Oh I ate at a restaurant during lent and they had a rice pilaf with all sorts of veggies and cheese on top. It was really tasty.

    Also a lot of times I stick with my regular: Plate of rice with a fried egg on top.
