Maybe tender chunks of chicken? Some places have "chicken medallions" in their pasta dishes, and they turn out pretty well. I'm also dying to try the dill sauce and pasta. Yum! Thankfully I'm not allergic to seafood, and it's one of my favorite things to eat!

Oh Lyn, there's a restaurant near me called Pho Kim Long. The guys I used to work with got a kick out of that. It was their favorite pho place.
Mmmm shrimp. I agree with Wrkn and flip a coin. That's what I do! Though I do love recipe #1. I love anything having to do with pasta.
Liv, I agree with sparkles and vote chicken; some skinless/boneless breasts sliced up nice would be awesome.
I made rosemary-sherry pork chops with onions for dinner last night. They came out okay, the pork was nice and moist and fell apart on the fork, but the seasoning was off. Maybe my sherry skunked, or it needed more salt. FI is a trash can, he'll eat anything you put in front of him, so of course he didn't even notice.
Anyway, tonight I've got chicken. I love cooking chicken, but when it comes to thinking of recipes for it, I tend to overload because there are so many things you can do with it and I get frustrated and end up doing the same thing over and over again. Though I do have a great recipe using ranch dressing I totally want to try...
Sorry, when we start talking about food I can't stop.

I love pho!! I got it all the time when I lived in the bay area! There aren't too many decent places in Tucson with Pho... but there is one near my house that's pretty tasty!

I totally over salted dinner last night- but with some more yogurt and a bit of lemon juice...okay- a lot of lemon juice. It turned out great. Andrew thought it was nice and very refreshing. We both agreed it would be an awesome summer dish- when it's really warm. :)
