  I'm no help, H and I usually take care of the things for our own parents (obviously write that it's from both of us).  This year, H got his parents a joint gift, which is an iPad.

  FI's mom has been pretty stressed lately so we got her a spa session, comfy PJ pants, super cozy chenille socks and a book she's been wanting to read.
  
  FI's Dad and Step-mom are odd. Well, not his dad, just his SM. She wouldn't let FFIL buy a leaf blower this fall even so he REALLY needed one (they have massive 100 year old trees in their yard) so we bought him one. She got upset so we said it was an early xmas present. So I guess that takes care of that.

  We're making a 'Sundae' Box to send up to them (if we don't end up going there) and it's including a movie that we know they've been wanting. So it's like family movie night + ice cream sundae! (minus the icecream.  we're sending 10 bucks for that)

  What are  your FFIL's interests and hobbies? Is he a movie buff? You could get the Best Buy gift card, but also put together a popcorn gift basket to go along with it.
  
  My FIL collects fire trucks and we happened to find a mahogany fire truck.  My MIL has a ratty old coat that needs to be retired.  She's not one for going clothes shopping, so I managed to find her a nice black pea coat on the cheap.

  I got them 3 nice Christmas ornaments. They leave their tree up year round. FI suggested the ornaments. I got one that is Victorian in theme (FMIL loves anything Victorian). I got one that is pretty and one that is rustic (it's a bell with holly and pine needles on the top). FI said FFIL's mom always had ornaments like the rustic ones.

  MIL is getting a personalized baking dish and a cover for her nook.  FIL is getting...a Best Buy gift card!
  
  Don't make it more difficult than it needs to be.  If your fiance thinks his dad would like a gift card, and you're struggling to come up with something else, just give him the gift card.  I'm sure he will appreciate it.

  Thanks ladies for the ideas! My FI is a typical guy - he has no idea what his dad wants (mom is out of the picture, and I always know what to get my parents), and I dont know his dad too well, since i dont see him very often... but i just talked to FI and we decided to get his dad a bottle of aged scotch... FI finally remembered that his dad might like that... LOL

  So far Paul blue ray as they loved it so much when we let them watch it. I think we outdid ourselves on his moms bday gift on Thanksgiving so not sure how to beat it. Granted it was only $54 total but it was the thought that I listened MONTHS ago to something she wanted.

  We got FMIL a bracelet with some charms on it. The charms are like lockets- they hold pictures.
  FFIL wants the new lady gaga CD. No, this is not a joke. I can't believe I'll be buying that this year!
