Post Your Favorite Recipe

School's Out, Busy at Work and Wedding Planning. I know us ladies have to squeeze in cooking dinner or lunch in between time.
So why not share your Favorite or a Quick and Easy recipe that others can use.

Here is Mine:

Cheesy Mostaccioli (Just Like Lasagna)
You need
1 (16 ounce) box of mostaccioli noodles (any round pasta noodles work)
1/2 lb or 1 pound of ground beef/ground turkery
1 jar of spaghetti sauce
1 (11 ounce) can of the condesed cheddar cheese soup
1 teaspoon black pepper,garlic,onion powder, italian seasoning
3 cups of mozarella cheese or italian cheese blend

Cook pasta as directed
Cook ground beef/turkey (drain)
Add spaghetti sauce,cheese soup,seasonings and stir to combine

 In a large bowl, mix the pasta, sauce, and 2 cups cheese.

Add  mixture to a greased 4-quart baking dish.
Sprinkle left over cheese on the top.

Cook on  350° for like 40 minutes or until heated through.
This can be frozen to ladies.

    My fave recipe is vegan since FI and I are non meat eaters.
    Totally Awesome Tacos


    Ingredients (use vegan versions):

        1/2 cup onion, chopped
        olive oil, as needed
        1/2 cup green bell pepper, chopped
        1/4 teaspoon salt
        2 cloves garlic, minced
        1 (15 ounce) can light kidney beans
        3/4 cup water
        1 (1 1/4 ounce) packet vegan taco seasoning
        1/4 cup nutritional yeast
        10 taco shells    

    Directions:

    1. Saute onion in olive oil until brown. Add green bell pepper, garlic, and salt. Saute 3-5 minutes more.

    2. Add in beans, water and taco seasoning.

    3. Let simmer until reduced, stirring occasionally.   While stirring, smash up the beans as much as you like (I use a potato masher to get them fairly smooth).

    4. Stir in nutritional yeast. Place into taco shells. 

    My favorite toppings are avocado, tomato, lettuce, and vegan sour cream.  Also, makes an awesome chip dip or layered bean dip. Enjoy!

    @Fabbiegirl I cant wait to try that. I will be attempting later this week and let you know how it turns out.
    You can also make the Mostaccioli vegan style.

    Chicken Enchiladas:

    Soft tortillas
    2 boneless skinless chicken breasts
    1 Can cream of chicken soup
    1 cup of sour cream
    8oz of Mild Cheddar Cheese
    1 pkg of taco seasoning
    *add a little millk if mixture seems too thick to stir*

    1.Boil and shred chicken
    2. Preheat oven to 350 degrees
    3. Combine all ingredients (leaving out a little cheese for the top)
    4. Spoon small portion into tortilla and roll up
    5. Spread remaining mixture and/or cheese on top of the row of tortillas
    6. Bake uncovered for 30 min.
    ENJOY!!! Its QUICK, EASY, and DELICIOUS!!

    Probably a little warm outside for this.  But I LOVE Soup!!  This one is from my allrecipes.com account.

    Chicken Tortilla Soup

    Ingredients

    • 6 tablespoons vegetable oil
    • 8 (6 inch) corn tortillas, coarsely chopped
    • 6 cloves garlic, minced
    • 1/2 cup chopped fresh cilantro
    • 1 onion, chopped
    • 1 (29 ounce) can diced tomatoes
    • 2 tablespoons ground cumin
    • 1 tablespoon chili powder
    • 3 bay leaves
    • 6 cups chicken broth
    • 1 teaspoon salt
    • 1/2 teaspoon ground cayenne pepper
    • 5 boneless chicken breast halves, cooked

    Directions

    1. In a large stock pot heat oil. Add tortillas, garlic, cilantro and onion. Saute for 2 to 3 minutes.
    2. Stir in tomatoes and bring to a boil. Add cumin, chili powder, bay leaves and chicken stock. Return to a boil, reduce heat to medium and add salt and cayenne. Simmer for 30 minutes remove bay leaves and stir in chicken. Heat through and serve.

    Now I really do LOVE to cook! All of these sound awesome! Really looking forward to trying those tacos!!!!!!

    I think after the wedding cooking is really going to kick my life up a notch. I am so overly obsessed with cooking and making meals that make people feel GOOD and entertaining is like my niche.

    Anywho I don't know what my absolute favorite recipe is but here is my

    RICOTTA STUFFED CHICKEN BREAST

    1 pack of skinless/boneless chicken breasts
    1 small tub of ricotta cheese {part milk if your counting calories}
    1.5 cups of fresh crabmeat
    3/4 cup panko bread crumbs
    1 cup of mozzerella & cheddar cheese mixed
    1 cup of cooked spinach DRAINED
    EVOO {extra virgin olive oil}
    1 onion chipped finely
    2-3 cloves of garlic chopped {i like garlic so i use 3}

    in a large skillet coat the bottom wil enough EVOO to sear the chicken breasts. DO NOT douse the chicken in the oil you only want enough to sear. When the chicken is brown on both sides remove them and place on paper towels to let the oil drain off. Chicken is not supposed to be fully cookied at this point. The final stage gets done in the oven.

    In the same pan with the chicken drippings, add in the garlic and let simmer for 1 minute then add about 2 tbsp of EVOO and then the onions. Cook until translcent, drain but keep that oil for flavor.

    In a large bowl, add ricotta cheese, cooked and drained spinach, onions, garlic, bread crumbs, crabmeat and 3/4 cup of cheese. Mix it all together, and season with salt and pepper to taste. Add in 1 egg to keep the filling together and set in the refrigerator for about 20 minutes just so it firms up a bit and is easier to work with.

    Take the chicken breast and add stuffing to the middle of it {about 1-2 tsp depending on the size of the breast} roll it from the bottome up and secure with either cooking string or toothpicks. Do this until all of the chicken breasts are stuffed. If you have leftover filling you could always make manicotti, or stuffed shells and freeze them for another dinner.

    Take the oil from the onions and garlic and drizzle it into a baking pan making sure it's coated. sit the rolled up chicken breasts in the baking pan and bake on 350 for 25 minutes {covered to keep it juicy}. Add the remaining 1/2 cup of cheese to the top and bake until it's bubbly and gooey on top.

    *sometimes i will add marinara to the bottom of the pan if i want a saucey base but it's up to you

    I like to serve a dish like this with homemade mashed potatoes or just a simple thin pasta {angel hair or thin spaghetti} cooked and tossed lightly in evoo salt and parsley for garnish!

    @A&M Abyss I got some chicken breast in the fridge at home right now and left over ricotta cheese. This will be dinner tonight..
