Guests adding plus 1's...

Hi all- My fiance and I are planning our wedding for October 1, 2011. We invited about 100 people. So far, we've had people add 2 extra guests on the RSVP, etc. Basically, Our guest list is up to 110 and now we're getting nervous about budget. I just had a friend, who already RSVP'd as just her, and now she's telling me she "might" bring a plus 1...but might not. 

We've already done the seating chart since we've heard from all the guests. This plus 1 is going to royally screw things up. What do I do?

    I guess the first question I'm asking is, how did you address your invites? Sometimes people are really REALLY dense about this even if you addressed an invite to 'Mr. & Mrs. Johnson' or even just 'Jane Johnson'. Many brides have come up with clever solutions to drive the point home on the invites that you can't bring a guest.

    I guess I'd call these people up personally and politely explain that you're excited they're coming, but you can't accommodate the extra guest. The reasoning could be that the venue's at capacity. I wouldn't bring money into the discussion.

    Thanks so much. The problem was that she already rsvp'd a couple weeks ago with just her, so it threw us for a loop. I talked with her and explained, and she was fine with it :)
