  I have very greasy hair, but I've kind of 'trained' my hair to go every other day without washing.
  I use baby powder in my hair on off days to soak up the grease and it works great. I have dark hair, and it never shows, but if you're worried about looking gray, you could get some dry shampoo and try it out.
  Even if you just get the dry shampoo for the day of, it might help a lot.

  It was a fairytale.

  I use dry shampoo if my hair is gross - however, even if I use baby powder or dry shampoo, I still don't like the texture of my hair the day after I wash it - and I don't really understand why greasier hair would keep curl better?

  My hair is oily as well. When my hairdresser recommended that I not wash my hair the day of the wedding, I told her my concerns about it being way too greasy. She told me to get up early to shower on the wedding day, and to put a tiny bit of mousse in my hair and let it air dry. This allowed me to shower and wash my hair, but gave my hair some texture to help hold any styling.

  I am a hairdresser, so I do understand why people say this, but if your hair truely can't take it, don't worry about it. You can even use a tiny amount of conditioner on the ends, but add lots of stuff for volume, Not really sure what products you use everyday, but there are many many that would work. I like KMS volume mouse (it crackles and is really fun! but works good too) or Rusk wired and extreme volume mixed together. or Kenra Volume cream and mouse together. There are so many it doesn't really need to be one thing, but it needs to have some "dirt" even if its freshly washed. What brand do you use? and I'll tell you what to put in.

  I usually use redken "Guts 10" spray mousse  - or a L'Oreal heat protection mousse in a pink bottle (not sure what it's called). Aynos - would you recommend blow-drying the hair on the morning of, or just using mousse and air-drying?

  I would wash it the morning of w/ a clarifying shampoo (a cheap one is ok), only condition the ends with your reg cond. I would say if you can find a really light non sticky product like Rusk thick like this http://www.folica.com/hair-care/hair-protection-products/rusk-thick-body-and-texture-amplifyer (which you can use all the time so it wont be  a waste of $) Probably about 10 -15 sprays all over hair, then add the Guts mousse and dry with dryer, no need to round brush or make it look good, just dry it and go! and NO matter what you do, do not put a flat iron on it at all!
  
  I have a lot of brides that have to wash their hair the morning of, b/c its either really greasy, or b/c they are going to flat iron it the night before for the rehersal dinner, and it is worse to come to the shop for an updo with a freshly flat ironed do, then a wet head!

  I think if you wash it early that day & let it air dry it would be good.  That's what I plan on doing.   I normally straighten it too, but it sounds like I should stay away from that. 
    I don't use conditioner too often, but I know when I do my hair is soft, but impossible to do anything with so I'd suggest skipping the heavy conditioner the day of the wedding.
