Garlic Scapes (hardneck garlic)

Anyone have any idea what I can do with the garlic scapes that have grown from my garlics. I have never grown hardneck garlic before so this is new for me!

Im probably going to chop mine tomorrow or the next day so I need to figure out soon what to do with them.

From what I have read they do have a garlic flavour, but it isnt as strong as the cloves. It also has a similar texture to asparagus?

Hmmm thats an idea! in an ommlette! I might try that. I usually have eggs for dinner on wednesdays when Adam works late, so why not.
  • The guy who sells them at our farmers' market recommends basically what everyone else has said. Stir fry, roast, grill, treat 'em like you would asparagus. They're good :)
  • I've been wanting to make this carbonara, but I haven't found any. http://www.saveur.com/article/Recipes/Garlic-Scape-Carbonara

The place we camped this weekend was known for ramps but we just missed them. :(

[QUOTE]Could you make them into a garlicy pesto (do they taste garlicky? I don't even know.) Or use them in some sort of butter sauce? (Or on bread? Like garlic bread).

I'm late on this one, but do this. My mom's husband grew a ton of hardneck garlic last year and we made oodles of pesto, it was delicious. I made some with pine nuts, but the pesto I did with the scapes and walnuts was absolutely fantastic. Just scapes, lemon or lime juice, your nut of choice, good olive oil, and a bit of pecorino. You can use it as a dipping sauce for an antipasto tray, use it for pasta (we did some with really fresh pasta and lemon zest, my mouth is watering now), or even brush it on skirt steaks and grill. Delicious.
