Since half of us are dealing with cold, snowy weather and may not be able to get out much this weekend, any favorite winter recipes? Or new ones you've been eyeing up but haven't tried yet? My friend hooked me up with this one, I made it for me & FI this weekend. Very good! There are 2 links, 1st is a smaller version that serves 2, the 2nd one serves 6 if you are having company or want leftovers. I made the 2 person version, we had no leftovers...

My favorite winter foods are chili and beef stew. Though I don't have recipes for either, I just wing it.

Actually, I love making anything in the oven that I can't when it's hot out. Chicken enchiladas are one of my favorites too!

Yum, that casserole looks awesome. I have some meatballs in the freezer that may be co-opted for this recipe.

I love roasting root veggies in the winter--toss cubed turnips, parsnips, carrots, sweetpotatoes, etc. with olive oil, salt, and pepper and roast at 400 degrees for 40 minutes or so. Yum.

Oh, also my boss's wife made the office lunch the other day and did this great thing with acorn squash. You halve the squash, then put a pat of butter and a little brown sugar, then roast them in the oven. Heaven in my mouth.

Printed the mushromm-broccoli recipe. Defintiely a bonus with link & print options!

The meatball sub casserole=deilcious! I'm not a big meat eater, but am slowly getting back to occasional meat & poultry. I got 1 lb of 93% lean organic ground beef at Whole Foods...those meatballs were gooood. Used leftover meatballs/sauce for meatball sandwiches on wheat rolls last night.

I'm planning to try this recipe for Chicken Korma this weekend. Looks so so good!

Chicken Korma

Ingredients

8 chicken thighs, boneless skinless

3 cups low fat chicken broth
1 tbsp olive oil

1 onion
5 cloves garlic

1 tsp turmeric
1 tsp cinnamon

1 tsp cumin
2 tsp raw ginger chopped fine

1/3 cup diced dates
1/3 cup dried apricots

1 fresh lemon juiced
2 to 3 tbsp cilantro chopped

Directions

Brown chicken in olive oil then remove to plate. Add spices including ginger to pan to lightly toast (watch carefully, do not burn). Add onion and garlic and let sauté until translucent. Add dates, apricots and reserved chicken to pan then pour all of the chicken broth over and stir. Bring to a simmer, cover and simmer 40 min. Just before serving add lemon juice and chopped cilantro. Serve with rice or couscous.

Number of Servings: 6

FI & I were supposed to go visit his family this weekend, but with weather is not going to happen...I have 2 organic chicken breasts in freezer...Think I will pound them thin, roll some spinach, fresh mozzarella & sundried tomatoes inside and bake!

Speaking of squash...Ina Garten's butternut squash risotto recipe from foodnetwork.com is absolutely heavenly. I even cut down on the butter and parmesan like some of the reviewers suggested, and it was incredibly luxurious. Probably the best thing I have EVER cooked.

Black Bean Soup with Sausage and GreensIt comes from my crock pot cooking for two cookbook, so it's perfectly proportioned for two people, and we generally have enough for Zane to have it for lunch the next day. 2 sausages, spicy or mild, cut into bite-size chunks (you could use a meat substitute or leave the sausage out. The soup and greens would still be delicious)8oz swiss chard, stems removed and coarsely chopped (I've used turnip and collard greens in a pinch when the chard looked icky)2.5 cups broth (chicken or vegetable)1 15oz can refried black beanssalt to tastesour cream, salsa, and lime wedges for serving.Heat olive oil in a large skillet and cook the sausages. Add the greens and heat just to wilt. Place the broth and refried beans in slow cooker and stir to combine. Add the sausage and greens and stir to combine. Cover and cook on HIGH for 2.5 to 3 hours. Add salt to taste. We love it with a dollop of sour cream and a splash of lime in each bowl.

Also if you try to go low-sodium like me, I have found sodium-free spices at Whole Foods. I was very excited.
