    I hope it's less stressful and more awesome, you totally deserve it.  Are you taking any time for yourself between leaving your old job and starting the new one?

    Thanks, my dear! I'm taking a little time off, but not a ton. I'm volunteering at Ben's school on Tuesday, so I'm taking that day off and I'm definitely taking Friday off. Matt has been in Cleveland for the entire month of December (except for Saturdays) and he comes home on Thursday, so we'll get to spend Friday together. Otherwise, I'll be working to get everything transitioned in time for me to leave.

    Ewww.  No.  Pork shoulder often has a good portion of fat (maybe a half inch at that size) that I generally cut off because there is a fair amount of fat marbleized throughout but generally they aren't especially fatty.  Just enough that it stays super-moist when braised.
  • Hi! I just made dinner and we ate. Now we're watching Smurfs. L is sick so he had a few noodles and Pedialite. I'm effing exhausted. I sold 116 cards yesterday at work, 141 today, and I've got one more day of work until my day off on Tuesday.
  • Hello ladies! I don't have to work tomorrow, so I'm staying up, since I'm not tired anyway. Just got done watching Christmas Vacation. I love it. I need to buy new Christmas movies, though, since I've had the same ones year after year (Love Actually, Elf, A Christmas Story, The Family Stone).

    Oh, and speaking of those cheesecake pops: I was part of the Daring Bakers (the group mentioned on Bakerella's blog post) when we did that challenge a few years ago. I sold mine at a bake sale to raise money for my mom and sister to do the Susan G. Komen Breast Cancer Walk. The group got way huge and I had to quit it right around the time of my divorce, but I loved being a part of the monthly challenges. I got to bake some really cool stuff that I never would have considered taking on had it not been for the support of my fellow Daring Bakers.

  • I'm here. Been lurking mostly just because TK has been so messed up and confusing. Seems okay tonight, but I'm sure I just jinxed. It's been way too quiet on SB lately.

  • jcb - yeah, pork shoulder roast shouldn't be that fatty. The fattiest pork roast I've ever used for carnitas was pork butt, and I had to trim quite a lot off of it because it grossed me out. My carnitas came out ok. I cooked the roast in the crock pot for about 4 hours, then pulled the meat apart and cooked it in the crock pot for an additional 3 hours with a can of tomatoes w/green chilis and a few scoops of hot salsa. I normally would transfer that to a skillet for about 20 minutes to cook it down, but we got so hungry that we just ate them fresh out of the crock pot.

  • Megh, those sprinkles are cute! I just made cookies and cut them into Chrismas shapes. L LOVES Santa's Mittens, so I made him a special one.
