Monday Accountability & Meal Plan

Morning ladies! I have been eating anything and everything lately. Getting back on track starting now! 

B: Frittata with ham, cheese, tomatoes, and onion (171), Greek yogurt (80)
S: Apple (72)
L: Mixed greens with turkey, avocado, tomatoes, onions, & balsamic vinegar (335)
D: Thin spaghetti with lemon basil pesto (402)
S: Brownie Brittle (120)

Total: 1180

Dinner Plan (lunches will be chicken or leftovers all week): 
Monday - Thin spaghetti with lemon basil pesto
Tuesday - ST buffalo turkey burgers with blue cheese broccoli slaw
Wednesday - ST sausage stuffed zucchini boats
Thursday - Grilled chicken with lemon basil pesto, steamed broccoli and potatoes
Friday - Leftover zucchini boats 
Saturday - Baked tilapia with lemon and garlic, steamed veggies

  • B- hot chocolate, yogurt wih blueberries

    L- orzo vegetable soup

    D-not sure yet may be some tofu

    S- guac an chips

    E- none too sore

    T- pasta

    W- portabella mushroom burger

    TH- ramen noodle tofu and vegetable dish

    F- tacos

    I also plan sometime this week to try to make my own guacamole. I'm buying everything for it tonight.  I anyone has a recipe they like to use let me know.

  • @Peaseblossom55 - I make awesome guac! 

    3 ripe avocados
    1-2 limes (depending on how limey you like it, I usually use 2)
    1 tsp salt
    1/2 onion
    3 garlic cloves
    handful of cilantro (depending on how cilantro-y you like it, H makes me use a lot)
    2 roma tomatoes

    Mash the avocado 'stuff' then squeeze in the juice of 1-2 limes. Add salt, mix well and set aside.

    Chop onion, garlic, and cilantro (I throw it all in my food processor).

    Dice tomatoes. 

    Combine onion, garlic, cilantro, and tomatoes with the avocados, lime juice and salt.

    Refrigerate for a while before serving (although I rarely do this and it's still delicious).



  • @swazzle thanks this looks good and easy.  Do you put everything in the food processor, or do you just use the food processor to chop the onions garlic and cilantro?

  • B:  1 pc. cran-walnut toast, 2 eggs
    S:  apple and cheese stick
    L:  leftover pizza, peach
    S:  orange
    D:  crockpot ckn teriyaki, brown rice, roasted broccoli, watermelon

    E:  cleaning the house and either 30DS, yoga, or jogging and walking the dogs. 

    we just got into town after being gone since Wednesday, so there is no food in the house!  I'll go grocery shopping after work but until then it's slim pickings around here.

    meal plan:

    Monday:  crockpot ckn teriyaki (click), brown rice medley, roasted broccoli
    Tuesday:  green chile beef enchiladas (using this sauce, click), ST latin rice, simmered black beans
    Wednesday:  MS one-pan-pasta (click) with grilled chicken, roasted green beans
    Thursday:  CL grilled pork tacos with summer corn and peach salsa (click), leftover latin rice, sauteed zucchini
    Friday:  probably get something out
  • @Peaseblossom55 - I only use the food processor for the garlic, onions and cilantro. I hate chopping that stuff so it's easier for me. I mash the avocados and chop the tomatoes by hand.

  • @Swazzle-thanks for posting that, if I wasn't travelling this week, I'd try it too.  I'll do so when I get an opportunity.

    B-Turkey sausage breakfast sandwich, coffee 
    S-Sweet cherries
    L-Mixed green salad with blueberries, chevre, pine nuts and balsamic
    D-Grilled chicken, some sort of veg, maybe rice

    E-Cardio Kickboxing and maybe BodySculpt too if I'm feeling motivated.

    L: not sure - chipotle?
    S: graham crackers and peanut butter
    D: bratwurst casserole (DH is very excited about making it. All I know is it has apples and cheese in it). 

    Rest of the week dinners:
    Tuesday - Bacon-wrapped filet with mashed potatoes and corn
    Wednesday - Pasta w/ ground turkey
    Thursday - Baked chicken w/ asparagus 
    I leave Friday for a 1 week business trip.

  • Ladies, how do you keep your calorie counts so low and not feel hungry?  I mean this seriously and without any snark.  I have been trying to lose the proverbial "last 10 lbs" forever and I get hungry when I restrict my calorie counts too much (say, under 1800 calories).  I am 5'9" and probably need more calories than many of the petite ladies, but I wish I could stave off hunger better to lose weight more easily.  Also, when I kick up my exercise intensity then I really get hungry all the time.  I am definitely eating healthy, low-glycemic foods so no sugar highs and lows would be causing the issue.
  • @CrazyCatLady3 - Honestly, if I'm feeling really hungry, I'll eat something. I'm not trying to starve myself, I like food way too much. Today, I'm just under 1200 calories which is kind of low for me but I have a feeling I won't be stopping at 1 oz of brownie brittle so I'm ok with that hahaha

    When you're working out, you should definitely eat more than normal. I'm a lazy ass so I don't have to worry about that :)

    Also, if you've been losing weight and you've just stopped and reached a plateau, I would try switching things up a bit. Eat that bacon cheeseburger you really want. Have something different for breakfast. Change up your workout. Your body may have gotten used to your routine, especially if you're eating healthy all the time.
