  Guests should not have to pay for anything- offering hosted beer wine and well liquor is perfectly generous and I would probably side eye any guest who complained about any lack of "top shelf" liquor...

  
  

  Anything you want to offer to your guests should be covered- if you are concerned about guests requesting top shelf, I would ask your venue to not even offer it from the get-go.

  Agreed!  My venue has packages for different levels of alcohol and guests may not purchase drinks (even on their own) that are outside of that level because it is, indeed, poor etiquette.

  It would be extremely rude for a guest to ask for something that is not provided.  If it is clear what is being offered (I do like to sign at the bar idea!) then that is what you drink.
