    When I first heard about it I thought it was gross (and I love bacon) but it is AMAZING!!!!  I got this recipe from the chef who made it for me.  It took me a few times to get it right.

    First, start saving your bacon grease until you get a cup or so (more is better)...  It keeps fine in a glass/stainless steel bowl in the fridge without a cover.

    Once you have enough grease pull it out of the fridge so it softens up.  Then you take unpopped popcorn and mix it up with the bacon grease until it is nice and covered.  Put it in a container with a lid and put it back in the fridge for at least 48 hours so the flavor soaks in.

    When you are ready to make the popcorn for real you put a spoonful of bacon grease into a pan with a lid and heat it up over medium high heat. 

    Once it melts put in 2-3 kernals into the pan.  When those pop the pan is hot enough to make the popcorn.  Dump as much as you want into the pan and keep it covered.  Shake the pan ever few minutes so it doesn't burn the unpopped kernals on the bottom.

    When it is finished popping sprinkle with salt and eat it until you get sick.  :)

    I now keep a pyrex container in the fridge with the bacon soaked kernels so we can have it whenever we want.  Waiting for it to be "ready" the first time was tough.

     

    @AprilH81 I HAVE GOT TO TRY THIS! I make my popcorn on the stove (I never use the microwave kind) with butter. But OMG, with bacon grease?! That could be heavenly.

    P.S. Y'all try popcorn with some cheddar (or any sharp cheese). I know it sounds weird but it is sooo good! I've converted all of my friends to it :)


    Do you use shredded cheese or a cheese powder?

    @AprilH81 I use regular block cheese and cut small pieces. Shredded cheese would work too but I hate shredding it because I always cut my fingers. I use to melt the cheese but it was to greasy. I put the small pieces in the bowl with the popcorn and eat it as I go.

  • SO happy it's Friday. Just ordered sushi for lunch, so yay! Going to stop at the grocery store after work because, when I volunteered to bring in corned beef and mashed potatoes to the office on Monday, my boss told me that if I really wanted to go through all the trouble to cook for everyone to please expense my purchases. So going to pick up the corned beef (on sale, yay!), potatoes, carrots for a whiskey-glazed side dish, buttermilk for soda bread, and heavy cream to make the filling for ICB cupcakes.

    Tonight is our engage-iversary so I'm going to make up some tasty veggie lo mein for dinner, serve the bottle of mead we've been saving, and make a s'mores pie for the man (I'd make steak, but it's Lent). My coworker's band is playing at a really cool bar near us, so we'll head there after dinner.

    Saturday is Go Get My Tires Mounted day, so I'll be up well before the crack of dawn so I can be the first customer of the day. There's a big St. Patty's Day parade in Morristown, but I don't think I'll make it back in time from picking up a new Crockpot bag in Elizabeth (the only freaking BB&B that has them in stock for like 50 miles). We'll see. We're hoping to have friends over for a full-on Irish feast on Sunday, but no one has RSVP'd yet. Grr. If no one shows, FI and I will just have to eat it all ourselves!

    @cookiepusher - your night sounds fabulous. And a s'mores pie sounds amazing, you should post pics! Sounds like you have a fun St Patty's coming up! I plan on going out with my coworkers on Monday after work to celebrate. It is supposed to be really cold and possibly snowy though which sucks. I remember St Patty's a couple of years ago where the weather was amazing. For some reason I can't remember what we did last year for St. Patty's.

    S'mores pie is seriously one of the easiest desserts ever. You make instant chocolate pudding (follow the pie filing directions, it involves less milk so the pudding is thicker). Pour the pudding into a graham cracker pie shell, top with mini marshmallows, and throw in the whole thing in the oven at 325 for a few minutes until the marshmallows are toasted. Put the pie in the fridge for a few hours until the pudding thickens back up. Serve.

    I show my love with food! Which probably explains why FI is 40 lbs heavier than when we met....

  • sarahufl - Thanks! I'm pretty excited for it. Funny thing-  I actually thought I signed up for the Brooklyn Half, but apparently I entered the lottery for the NYC Half lol. I do want to do the Brooklyn Half though, because it ends at Coney Island and I love it out there! My friends girlfriend did it last year and said it was a blast.

    FI has done the BK Half every year for a long time. I always meet him out there- it is fun!

  • I've been at a conference all week. Last night was the social with lots of free drinks and a dj. When you combine free alcohol, a dj, and scientists you end up with the most awkward dance party ever. My school friends are throwing me a bachelorette party this weekend, so it will be more drunk scientists awkwardly dancing. I think the last time I've had 2 hangovers in 1 week I hadn't meet FI yet. FI and I met in person for the first time exactly 5 years ago today!

  • For your viewing pleasure, Cookie Pusher's S'mores Pie! I initially started with mini marshmallows but this was one of those extra large pie crusts so I switched to the full size marshmallows. And used devil's food pudding. My kitchen smells delicious. (Also, accidentally lit one of the marshmallows on fire, oops!)

  • Hi ladies.

    What a week.  We are all moved in.  I think I have about 85% of the unpacking done.  Furniture is all setup where we want them, closets are all setup.  Kitchen done. Grill arrived. 

     DH doesn't have off until Monday at which time he will hang the pictures and some shelves so I can finish up the living room.  Other then finding an office desk, we will be completely done.  

    I just took Chef on a walk to this town center type place and got some yogurt.  It was such a great walk.  So beautiful out today.  

    DH is working until late so I'm contemplating having a glass of wine or not.  I was tired last night I ended up falling asleep instead of having a glass like I said I would.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • Busiest day ever. I feel like I've barely had a moment to myself.
  • I just poured myself a glass.  I'm out on the deck looking at my new view.  Which I have to say it pretty damn nice. Small lake only a few feet away, mountains pretty close, clear blue skies.  We face more south, but still get to see the some of the sun go down.

    I think I'm going to like it here.

  • Yaaaaaayyyyy @lyndausvi!! So glad you are getting settled and love it there. It was beautiful here in Denver as well, and I'm joining y'all in some much needed Friday wine. I'm with HisGirl that this was thee longest week ever.

  • I'm sitting  with my NOLA dog, on my Indy deck chairs in Colorado.   Oh how things have changed over the years.

    Now I have to get use to DH being gone 4+ nights a week.  We were like that back when we met.  I was also working some nights so it was not a big deal.  I also had a lot of friends.   In NOLA and Indy he only worked 2 or so nights a week and even then he still left by 8 most nights.   So I got use to dinners with him.  It's a little adjustment eating lunch and dinner alone.  

    Last night he came home after 9 and I was passed out of from exhaustion. He had a ton of energy.  It will be all good once I start meeting people and getting into a routine. 

     In the meantime my happy hours will be with you all.
