DH will be at a meeting until like 8 tonight. Who has ideas for a healthy meal that is quick to finish up, as in I don't mind if there is prep while I am home alone for the few hours before he gets there, but I would like something that can be finalized when he is on his way from his meeting.
I need to go to the grocery store, so I am open to any ingredients really. . . . . except for coconut and shrimp (i'm allergic)
