  • Dinner is pretty lame tonight. Whatever leftover protein is in the fridge (two kinds of chicken and a roast), lemon-garlic spinach, and some buttered noodles. Tomorrow, though, oh tomorrow will be glorious. Pan-fried egg noodles with shrimp and vegetables. It will be nice to actually have time to make an entire meal in one shot.

  • Dinner with friends fell through (our fault basically), so Fi and I braved a trip to Costco and then got tacos from our favorite place on the way home.  Yum.

  • I made linguini with red clam sauce. I loved it. The kid wouldn't touch it. FI kept telling me it would be better if I used chicken instead of clams. 2 hours later and he's binging on cereal.

  • I had no dinner. Maybe I'll head into the kitchen and rustle up some chocolate.
  • My FI was off work so I put him in charge (such a nice change; I wish he got off earlier, I'd put hi in charge more often) and he made grilled chicken, veggies, and couscous.

  • I made hamburgers the size of my face for supper last night. They were delicious.

    Tonight, I'm making Alice Spring's Chicken (like Outback's) and grilled potato wedges with green beans. I'm already ready to be home and eat supper.

    Alice Springs Chicken is my absolute favorite, except maybe for the Alice Springs Chicken Quesadilla-minus the mushrooms.  Is it as good making it at home as the restaurant?  And if so recipe please?

    @emcmac87 Alice Spring's Chicken was one of my favorite entrees from Outback, until they raised the price to like $14 FOR CHICKEN!. Uhm, no. you can Google recipes but I kind of do a modified version of the ones you find. and FTR, I think it tastes better homemade. 

    My recipe:
    -4 boneless and skinless chicken breasts
    -seasoning of your choice (I either use Lawry's or Emeril's Essence)
    -6-8 slices of bacon
    -honey mustard (there is a special recipe for this but I just use Food Lion or Walmart brand)
    -shredded cheese (some recipes suggest pepper jack and cheddar. I just use whatever sharp cheese I have on hand, mozzarella would not work.)
    -1 cup mushrooms (I never use these, I hate mushrooms. SO I don't know how to cook them. But once they are cooked add with bacon)

    1. Thaw chicken. Using a meat tenderizer (I don't have one so I just a rolling pin), beat chicken to make it about 1/4" - 1/2" thick. This helps it remain tender and cook better.
    2. Add the seasoning salt of your choice to both side of the chicken. Use a liberal amount because this balances the sweetness in the honey mustard.
    3. Cover chicken and place in refrigerator for 30 minutes. 
    4. In a frying pan, fry bacon (I do this while the chicken is in the fridge). Make sure to save the grease!
    5. Set bacon aside.
    6. Preheat oven to 350 degrees.
    7. In the frying pan with the grease left over, seer the chicken. You want to do this until both side are a little crisp.
    8. once the chicken has been seered, place chicken in some type of oven safe pan or dish. I usually use a Pyrex rectangle pan or the bottom part of the broiling ban. 
    9. Spread honey mustard on both sides of chicken. I don't know the set amount, I just spread until covered.
    10. Add bacon on each piece of chicken (and mushrooms).
    11. Cover with desired amount of cheese.
    12. Bake in oven for approximately 25-30 minutes. Really until cheese is melted good.

     It is amazing!
