Pizza help

H makes a decent pizza, it uses potatoes in the dough, and turns out quite tasty, but is a bit heavy. We're having 4 friends over on Friday, and he'd like to have some sides to go with the pizza. We're thinking a salad, but would like something else to add. Also debating if I should do a dessert. Thoughts on if I should and what would be appropriate?

    Sorry, first you need to give me this dough recipe.

    For real, I can't think of a side dish! Neither can J. Maybe some roasted veggies--a little more substantial than salad. For dessert, I'd try to do something very basic like brownies.

  • What about doing a green salad and a caprese salad as well? Roasted vegetables also would work.

  • · 3 cups bread flour

    · 2 tablespoons olive oil

    · 1 tablespoon salt

    · 2 teaspoons active dry yeast

    · 1 cup warm water

    · 2 large potatoes

    · 3 tablespoons butter

    · 1.5 pounds smoked sausage

    · 1 large white onion

    · 1.5 pounds smoked gouda

    · 1 pound shredded mozzarella

    · 1 teaspoon vegetable/canola oil



    1. Mix yeast with half cup warm water. Stir gently until frothy. Let sit for 10 minutes.

    2. Combine flour, oil, salt, remaining half cup water and yeast mixture.

    3. Knead with stand mixer and dough hook (or by hand if necessary) for 10 minutes.

    4. Brush large bowl with vegetable/canola oil and place dough inside. Cover and let sit for about an hour.

    5. Set water to boil in a medium size pot. Skin and chop potatoes into chunks.

    6. Add potatoes to water, reducing heat to medium. Cook for 15 minutes. Strain potatoes.

    7. Mash potatoes with butter and set aside to cool.

    8. Once finished rising, knead dough and mashed potatoes together gently, by hand.

    9. Set oven to 425 F. Spread dough to desired size and prebake for 10 minutes.

    10. Brown sausage and strain. Slice onion and cook in sausage grease for about 15 minutes.

    11. Top prebaked crust with smoked gouda, onions, sausage, then mozzarella.

    12. Bake pizza for 25 minutes and cut into slices.

    Personally, I fucking hate making this pizza. Integrating mashed potatoes into dough is not an enjoyable feeling to me. But it is tasty. The dough is also finicky and doesn't like to stretch. but again, tasty.

  • I don't think pizza really needs a side dish, other than a salad, I suppose. As for dessert, since you're hosting, I think you need to have something. Maybe chocolate covered strawberries? Light and easy to make. 
  • I second @RebeccaFlower - salad is good - and for dessert I was gonna say fruit - even some grilled pineapple, peaches, pears, watermelon - but the chocolate covered strawberries sound fantastic too!

  • You could do gelato or cannoli for dessert, but I like the chocolate dipped strawberries idea, too. Especially if it's heavy. Or sorbet.
  • Bruschetta perhaps? That's what I get at my favorite pizza place. For dessert...chocolate fondue? Cheesecake bars? Tiramisu? Chocolate chip cookies?

    I would skip a side dish and do an appetizer instead. Keep the salad of course. I also always serve dessert when having guests over. So I'd plan for something even if it's light.

    Something fruity is definitely a yummy summer dessert, but I'd also throw out a desert pizza... something with a thinner crust so it isn't too heavy.  You could do a three course pizza meal!  A veggie pizza, a meat pizza & a dessert pizza.

    Yes, I am a total pizza fanatic.  Now I will probably execute this idea the next time we have people over haha.

    You said the pizza was a pretty heavy dish? Definitely a salad, probably with italian dressing rather than ranch. Dessert should always include chocolate, IMHO (nah, I lied, it's a law). BUT (good) chocolate in a double boiler over a stove and some fruit - dip'em, come back and chill? NOMMMMMMMMMM

(Thought about doing the strawberry shots....not entirely sold, esp. since if it's something I can make earlier in the week, the better cause I'm working a 12 the day before, and work day of, so not much day of bake time) and saw this combination of words

    Sorbettooooooo! Great for dessert and nice and light after what sounds like an amazing pizza.
