    Have you thought about vineyards in Long Island? 
    If you both love the Adirondacks - something like that would be great.
    It's not too vineyardy where all it would be is wine - but at least you'll still get some awesome stuff.

    Sedona AZ is beautiful!!! It is one of my favorite places, the desert is absolutely stunning and there are so many unique things to see and do.  

    I know you aren't much of a beach people but Cape Cod is another wonderful destination. There are lots of beautiful little towns and it is really a quaint little area that offers a quiet trip (I am also getting married there next August so I am slightly biased). 

    And I totally second PP who said Vail CO, hands down the most beautiful place I have ever been. I think that from what you mentioned, if I had to pick any of the places listed here Vail would be my top choice!!
