Hummus-crusted chicken

Because I am eating it right now and HOT DAMN it is tasty!  Wow!  I made a huge batch of hummus so we have leftovers of that, plus I made a few extra chicken breasts for later this week.  And I used a thin layer of hummus so it is diet-healthy.  I think I will make this once a week from now on, no joke.  It only took more than half an hour because I didn't have the hummus pre-made.  I even used frozen chicken tenderloins.

ETA: realized I should share what I did in case anybody wasn't around for the original thread.  I used Alton Brown's Hummus for Real recipe, with a little less water and a little more garlic.  I spread out some green beans in the bottom of a glass dish, then layered TJ's frozen chicken breast tenderloins in a single layer over that, then spread a little hummus on each chicken breast.  Baked at 350 for just over 30 minutes.  Chicken is juicy, hummus is crusty, beans are crispy.  YUM.

  • It was me! I'm so glad that you liked it! Found it on pinterest about two years ago and it's become a staple in our house. I tried a cilantro jalapeno one for FI the other night and he LOVED it.

    Mmmm I'll have to try it. FI goes through a family size red pepper hummus by himself weekly. And I did not know you could put frozen meat in the oven, I always just buy fresh each week.

    ETA- Sorry Alton Brown- slow cooker chickpeas for 9 hours? Aint nobody got time for that!! Store bought hummus it is!

    @RebeccaFlower it's so easy it's barely a recipe.  I added it to the OP:

    And here's the original version CaitTDid shared.  She used different veggies:

    Ingredients - 1 zucchini chopped, 1 yellow squash chopped, 4 boneless & skinless chicken breasts, a lemon, a container of hummus (any kind, though garlic or lemon dill tends to work best with this recipe), olive oil, salt, pepper. 

    Toss the chopped veggies in a large bowl with olive oil, salt and pepper until evenly coated. Layer veggies it the bottom of a large casserole dish. Lay chicken breasts on top of the veggies and cover each breast with a layer of hummus. Squeeze juice from the lemon over the entire dish. Bake for 25-30 minutes at 450 and you're done! Seriously one of the easist dishes you can make. You can make the veggies separate from the chicken but I like the easy clean up from using one casserole dish for everything.  And you can jazz it up with different kinds of hummus or seasonings, or use different veggies.

  • I have been trying to convince FI to try hummus for so long now. He says he refuses to try anything that looks like baby food. I told him he is a blasphemer and that I am now seriously questioning my choice in life partners (totally kidding). Maybe this will be the way to get him to convert!

    I have been trying to convince FI to try hummus for so long now. He says he refuses to try anything that looks like baby food. I told him he is a blasphemer and that I am now seriously questioning my choice in life partners (totally kidding). Maybe this will be the way to get him to convert!
    Yeah, this is a good recipe for him.  The hummus gets crispy on top of the chicken so it's not like baby food at all.

    Here's an idea if he doesn't like the texture of it.  A restaurant near me serves their hummus unmashed in a mortar and pestle so you can mash it to your preference.  There's no tahini in it, just chickpeas, garlic, lemon juice, olive oil, and probably salt.  People mash it up as much or as little as they like.

    Maybe you can get him just liking the major ingredients first, then he'll be willing to try the actual mashed-up with tahini kind.

  • @jenna8984 I totally pulled this with FI with eggplant. I made eggplant parm and told him it was chicken until he cut into it. At that point I had purposely starved him all day so he could either eat or starve. He now loves it. Muwahahahahaha!image

    Did this with mushrooms ground up in my black bean burgers... FI not only said he didn't miss the meat, but that he LIKED them. Then I told him there were mushrooms in them and he looked at me like a 4 year old who was just told Santa wasn't real.
