Dinner Suggestions


So, about a year ago the Albertson's next to my house went out of business. I went a little hog wild and bought a ton of stuff. I mean, it was all 50-75% off. What was I supposed to do?

Anyways, a year later and my overzealous purchases are beginning to expire. As such, I am refusing to buy any new food and am finishing what's left in my pantry. It's been kind of funny to plan meals around sides, but that's what tonight will be about.

Which leads me to: What entree will go with Lipton Onion Roasted Potatoes? Any suggestions? What is everyone else making tonight?

    I made homemade meatballs and sauce last week. Then vacuum packed individual packets. So I'm going to boil up some pasta, heat up the meatballs and bread.


    What kind of proteins to you have? Potatoes go with a lot of things.




    ETA - I'm in a clean out the pantry and freezer phase right now also.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • IDK what time zone you're in or if you have time to cook a roast, but this is really good, just mix everything together, pour it over the roast and cook in the crock pot all day or the oven for a few hours:


    Balsamic Beef Roast
    4–5 Lbs Beef Chuck Roast
    2C Beef Broth 
    ½C Light Brown Sugar
    ¼C Balsamic Vinegar 
    1T Soy Sauce 
    1t Salt
    ¼t Red Pepper Flakes
    3 Garlic Cloves, crushed
    Zest of ½ Orange


    We're going to the gym right after work, so probably having something lame like grilled chicken or protein shakes when we get home. Wheeeee.

  • A lot would go with that. Roasted chicken. Or chicken marsala. Or a salmon dish.
  • Haha, I often plan dinner around a side that sounds good.  It usually happens when I just really want either peas (I am weird, I know) or mashed potatoes.

    As for what your potatoes would go with... I would do a roasted chicken, grill a steak, or make some kind of burger (one of my favorites is topped with herbed goat cheese, baby arugula, and red onion).  Potatoes are delicious and go with any kind of protein in my book.

    Lately I have made brat burgers with roasted broccoli, sloppy joes with a homemade sauce, homemade supreme pizza with salad, garlic roasted chicken with potatoes, carrots and onion, and grilled ribeyes with baked potatoes and roasted asparagus.  I would eat those potatoes you mentioned with all of that except the pizza.
  • Not a meat eater, but I imagine a good steak or some roasted chicken breast with the same seasoning and some green beans.

    I'm having spaghetti squash in a butter and garlic sauce, not sure what I will make for H yet.  It gets pretty frustrating when our diets are so different and he barely eats any of the things I make.

  • I'm not sure on the protein, but I just made some charred brussel sprouts on Tuesday and I have to say they were fan-fucking-tastic. If you can buy/have brussel sprouts, you really should make them. I'm sure they go great with potatoes :)

    delicious.  I am totally trying that soon.  

    @nikkiJay333 those burgers sound heavenly.  I was also thinking some kind of chicken deal.

    @lyndausvi doesn't it feel good to use up everything!  It's like a game.   

    And I have some asparagus in the freezer I could make, and protein is honestly whatever I pick up on the way home.  I'm trying to get rid of all my boxed stuff because a) it isn't really all that good for you and b)there's just something exciting about being all, "I used everything!" 

    I recently starting making all of my spice blends, and I'm never going back to the pre-packaged stuff.  I just have a few beef stroganoff, taco and liptons to make before I'm free.

    DH is never home for dinner, so it's just me.  For some reason we have a lot of frozen vegetables.   I have some teiryaki and rice so I've been making a lot of stir-fry type dishes lately.

  • @beachyone15  I have never heard it referred to that way before, but I am going to start using that term!  I always have mashed potatoes when I have peas.  Yum!

    @Time2strtliving  They are soooo good.  It's a copycat from a burger Cheesecake Factory used to have.  We always put a little miracle whip on it as well (the restaurant used mayo).  This is my "fancy" burger.

    Hey, at least you're eating veggies!  Luckily I've never been with anyone who will refuse to eat what I give them.  I've had some "so....this isn't my favorite...." and I'll usually refrain from making that dish again.  The exception is my secret family bolongnese recipe from Italy.  I don't care if you only like alfredo sauces, you'll learn to love my sauce, damnit!

    I also like poaching my salmon.  And yeah, the outrageous sodium is part of the reason I no longer buy premade spice mixes.  I've been trying to eat as "close to nature" as possible, because a lot of nutrients get lost in translation when they're processed  (Edit: I'm not a vegan or raw, I just don't want to eat anymore boxed/overly processed foods if I can avoid it.  Exception: Pizza.  Because, pizza).

    Also, some of the crap they put in those mixes is ridiculous.  Why is there so much MSG?  Why is there dairy in my spice mix?  What?  It's also just a lot more economical to make your own spice mixes.

  • Tonight FI is grilling vidalia onions, orange bell peppers, and some chicken florentine burgers. Gonna cut it all up, put it in grinder rolls, and melt muenster cheese on it. I am gonna eat all the things, after I make the cocktails: sparkling peach lemonade and vanilla vodka.

    Darn!   I keep trying to go dairy free and then there are magical posts like this that say things like, "garlic goat cheese."  

    ETA: That sandwich looks heavenly.  And thanks everyone for the suggestions!  I love trying new things.
