So, what's for dinner?

  • TACOS.

    Seriously, I can not get tacos out of my head.  At the very least, I'm buying some avocados at lunch to make some guacamole to snack on.

  • yum. The last 2 nights have stir-fry like dinners. Tuesday it was tuna, rice and veggies. Last night was tilapia, rice and veggies. Tonight I think I'm going to have spaghetti and meatballs. I made meatballs a few weeks ago. I pre-portion, vacuum seal and then freeze them for later use. I think today is the later use.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • We're most likely going out tonight.  On Thursdays we volunteer at our church from 7-8:30.  Since DH works until 6, I'll bring him the gourmet PB&J for him to snarf down as we're walking in.  Exciting, I know.  But I will be following this thread for recipe ideas!
  • We had decided earlier this week (before the Taco Bell thread) that tonight was going to be taco cups. Now it just seems extra fitting!

  • No cooking dinner over hre tonight - my coworkers are taking me out for dinner and drinks as a sort of "yay you're getting married" celebration. I'm getting lucky the next few nights - dinner tonight, bridal shower tomorrow evening and my mom picked out a yummy dinner for that, and Saturday night FIL's invited FI and I over for dinner. I'll make a side dish for that but there's nothing I love more than not having to cook.
  • Chili cheese dogs. I made a big thing of chili last night and corn bread muffins and am using the leftovers for chili dogs tonight. The boys are happy.

  • 2 of FI's friends are coming over after work to help with a house project. We have no idea what time they'll want to eat. His son goes to bed early-ish and likes to eat early. On top of that, we just learned that his friend's youngest son is back in the hospital so I'm dropping dinner off over there.

    It's totally not weather appropriate but I don't have a ton of time or groceries so it will be baked mostaccoli. I'll use the ground beef from the fridge, some frozen Italian sausage, onions, and whatever canned tomato products I have in the house. Add pasta, melt shredded mozzarella over the top. Serve with a salad.

    I made tacos and homemade guacamole last night and what I really want is leftover guac and chips...

    I figure that if I make a tray for home and one for the hospital I should be good to go. We shall see.

  • mm last night I had a turkey sandwich on a toasted english muffin with iceberg lettuce and cheese. It was pretty good!

    I'm going to get chipotle on the way home. The painters are kicking my ass today, and between them and the hormones, I'm surprised I didn't find CHIPOTLE spelled out in zits on my forehead.

    I had Chipotle for the first time last night and I understand now. Loved it so much I made a replica burrito bowl for lunch today.

  • I'm kid-sitting my teenage cousins tonight. Boy is eating at a school thing and Girl just wants pasta. I'm still eating low carb so I will probably pick up some meat at the grocery store and have something salad-based. Boring.

  • umm, DH just said he will be home for dinner. He is on that crazy diet though. IDK now? I might just stick to my plan and he can eat whatever he wants.

  • I'm totally doing burritos thanks to you guys talking about taco bell. Still debating if I am going to make them myself, get them at this local joint or just go to taco bell. We'll see what FI would like!

    That is what I do. When ever H wants to be healthy or is "eating for his body" and i am not prepared I make whatever I want and let him fend for himself. He is a grown up. Even if it is for good reason cooking around someone else's diet is hard when you are not prepared.

  • No carb here myself. I'm thinking of making some sort of chicken with mushroom dish. Maybe I'll make a broccoli casserole or something. Actually, I just remembered I got some zucchini from TJ's this week. So either a zucchini and keilbasa casserole, unless I can find another zucchini recipe to make with the chicken.

    What if you make chicken fettuccine alfredo and just had a chicken breast drizzled with a little of the alfredo sauce (enough for taste but not enough to be overly fattening)?  And THEN added a boring salad?  =)

    DH and I eat different meals pretty much 95% of the time.    I also rarely cook for him.   Bonus of marrying a chef.  But we at least try to have similar stuff. Like we will cook rice and veggies, but we will have different proteins.  Or if we have pasta I have spaghetti and he has a different kind.     

    But I've had rice and fish for the last 2 nights.  Not in the mood.   Not sure what DH ate this week.  He eats at work most of the time.

  • jambalaya (http://www.100daysofrealfood.com/2010/08/28/recipe-easy-jambalaya/)....mmmmm....It's simmering now and it smells amazing! FI is outside with the landscapers digging a trench for the gas line and the boys will be HUNGRY :) I love feeding hungry boys after hard work.
  • I'm supposed to be eating dinner with my dad, because I was supposed to have just gotten out of my last dress fitting. But no, my motherfucking office lied in what time they said the motherfucking bus would bring us back from our team event, so the bus that they said would leave at 3:45 didn't leave til 4:30, which meant it got stuck in traffic on the way back to our cars, and then I got stuck in the most miserable rush hour I've ever witnessed and I missed my appointment. So now I'm home ragey and stabby and sobby with no dress and no dinner.

  • Well it's starting out to be a bust.  DH decided he wanted salmon.  Great, I do no like salmon.  Went to store to get some.  Come home walk dogs, blah, blah.  He goes to cut the skin off.   Worms.   GROSS.

    Then he said, "I will just have meatballs".   Ah, there is only one pack left.    Off to the store to take back the fish (which they took back and gave me a cash refund for the amount before the discount) and got some chicken for him.

  • Unstuffed stuffed peppers.  I can't be bothered to stuff them and bake them, so I just chop the peppers and top it with the sauce.  DH is going to see his separated parents to help with taxes.  He was right when he said I don't want to go with him.

    Tomorrow at noon. Thankfully I already had a half day for Labor Day weekend, and was planning on working it from home since my office is too far away to justify the drive for only half day. I'll still need to miss an hour to get to the salon but I don't care anymore. Otherwise I'd have to wait til 9 days before the wedding. As it is this is gonna throw off my timeline for doing escort cards, programs, favors, flower girl baskets, ring bearer pillow, guest book, kids' packs... GAH! Initiate freak out mode.

  • I was going to have vegetarian lasagna that I made Tues. with leftover rolls from the grocery bakery and caesar salad. Then my parents decided a couple days ago to drop by so we went out for pizza.
