What's for dinner?

I have been stress eating lately, so all I think of is food. So I figured, ANOTHER food thread is in order!

 

It's guy night. Basically all the guys get together at our place and watch Thursday night football and I get to have my bed all to myself and read cheesy books and drink wine. TGIThursday!

 

Tonight I am making meatloaf cupcakes. Sounds super weird, I know. I take my meatloaf recipe and bake it in a cupcake pan. The "frosting" is mashed potatoes and I garnish with a fried zucchini slice and crumbled bacon. The guys love them.

  • I'm spending tonight doing all the beauty prep-work for a wedding I'm attending this weekend, so it's leftover pasta fagioli from earlier this week. I might make some bread to go with it, but probably not.

  • Haven't decided yet.  If FI gets home early, I will probably do blackened chicken with fried okra and cheese grits.  If he's late, we'll probably order in. :)

  • Fajitas!  First playoff game for our baseball team is tonight and I wanted to make something easy and that doesn't involve lots of dishes because I want to spread it all out on our big coffee table so H and I can eat and watch the game.

  • Y'all are so creative. I try to be, but not tonight. 

    Tonight = leftover sushi. Yes - I do take my leftover sushi. And yes - I eat it the next day. :)

    We are building a fence because we're getting a dog (squeeeeeee!!!!!), so quick eats is what I'm all about for the next couple weeks.

    Those sound delish! FI and I don't like ketchup (weird, I know), so we make our meatloaf cups with ground turkey, veggies and BBQ sauce mixed in! Yum!

    Not feeling like anything involved tonight. Thinking Trader Joe's Chicken Apple Sausage sauteed with zucchini and squash... and a 90 second uncle ben's brown rice pouch thingy :)  
  • Autumn soup (carrots, butternut squash, and sweet potato) with some shredded chicken and topped with bacon, because bacon.
  • It's me and FI's 3 year dating anniversary and the fair is in town so we're going there tonight and dinner will consist of corn dogs and Polish sausages and other delicious fatty fair foods lol

  • Everyone's dinner sounds awesome! @Maggie0829, do you have a recipe for fajitas? My bachelorette party is on Saturday and we are all getting ready at my place, so I wanted to make something to eat for the girls.

  • Ohhhh, those meatloaf cupcakes sound awesome! BF and I got frozen ones from Trader Joe's a while back and they were also delicious. Zucchini and bacon on top is killer, though. Yum. 

    I'm probably just ordering in tonight. Maybe some avocado curry from the Thai place near my house. I dunno. I have very few groceries or motivation to get them or cook anything. On the other hand, we're having a food day at work tomorrow so I have to make something for that anyway, so maybe I'll heat up some frozen turkey burgers and veggies or something. 
  • Leftover tacos and ribs....They don't exactly go together, but they need to be eaten before they spoil.  I'm thinking maybe Chicken Curry for tomorrow though.  Mmm.

  • @SaraBrideSoon - It isn't super fancy but easy!  I buy beef from the store that is already pre-sliced in strips (such a time saver) and then I use Lawry's mesquite marinade and cover the beef for about 30 minutes (longer if you want a more intense flavor).  Then I dump the marinated meat in a large skillet and cook it up, doesn't take very long.  I then sautee up lots of onions and peppers, grate some cheese and open a jar of salsa.  I warm up the tortillas in the oven in a reynolds wrap package and then use my plate warmer thing-a-ma-bob as a makeshift tortilla warmer.  And wa-lah!  Of course you can do whatever toppings you want, but H and I like our fajitas a bit on the plain side :)

    Holy crap, I think SO would love these!

    I'm thinking about getting some ground beef for burgers since I have a bunch of buns left over, and they're the expensive ones! lol

    I feel fatter than usual and disgusting and am getting married in about 10 days. I'm sticking to raw broccoli for the next week. The boys will probably get pasta with Italian sausage and zucchini.

  • Not sure. DH is OOT tonight.  Might just have some chicken stir-fry.  Or I might get some sushi.  






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • pulled BBQ chicken tacos. My mom made a huge batch of chicken and froze it for me so I wouldn't have to cook :)

    DH is having dinner at happy hour with some coworkers, so I think I'll make myself this since he doesn't like quinoa. I might even go a little crazy and add some chopped apple. Look out!

    Just to clarify @wandajune6, I loved this because of the pasta and sausage, not because you are feeling fat.

     

    My body is the worse with stress. I bloat, become emotional, and basically PMS no matter what time of the month is is.

     

    Try some anti-bloating medicine, lots of water (wine has water in it right???), and then take a relaxing bath. I am so excited for you and bet you will be a stunning bride!

    You're sweet! I've had a crazy time at work that's causing the same issues. Wedding planning isn't helping. I've been trying to guzzle as much water as possible, cut out as much salt as possible, and will have to look into those meds. Thanks!

  • Smorgasbord of leftovers tonight to clean out the fridge since DH will be out watching football! My parents are coming tomorrow night for my dad's birthday dinner and I'm making parmesan crusted pork chops, baked potato, sauteed green beans with onion and bacon, and a big salad. Lots of wine too!
  • I love the idea of meatloaf muffins! I love the ones from trader Joes, but never thought to make them myself.

    Earlier this week, I cooked up a huge batch of chicken pot pie soup, and a pinterest recipe of chicken/cream/white wine/mushrooms/bacon so we're going through leftovers of those this week. I wasn't a huge fan of the chicken/bacon dish (I got a little bacon crazy and added waaaay too much, which left the chicken super bacon-greasy). DH loved it though, so he'll eat it tonight. Given how my day is cracking up, I'll probably end up eating bagel bites after my hair cut.
