    Just make sure you trim ALL the rind off the brie - it doesn't melt, so it'll leave pieces. You could whack the rind off in a larger piece and toss it in so the cheese melts off of it and then you can pull the rind off.

    How about mushroom soup, or mushroom sautees? Mushrooms as a side to roast beef is always so good, or if you find the big mushrooms you can stuff them with some herbs, cheese and panko/breadcrumbs and then bake them for all vegetarian.

    We are trying a "fall" stir fry as DH has called it.  Sausage, butternut squash, green beans, and apples.  I'm very curious to how to turns out but I have a feeling it will be wonderful.

  • Last night I made chicken parmesan for FI and one of his BM. It was a huge hit.

     

    Tonight I think we are eating out. It is chilly and rainy here today so I am thinking Pho or Chipotle. Either one I am 1000000000% ok with.

  • Our easy go-to tonight.  French roles with BBQ chicken. We just use canned white meat chicken, and heat it up with some Sweet Baby Ray's BBQ sauce.  So easy.

    GO FOR THE PHO! Mmmmm yummy. I wanna try making it myself soon but there's a place by us that's soooooooooo good, and I could likely never replicate their awesome coffee drinks anyway, so IDK if it's worth it.

  • Ugh all of this is making me hungry. I keep thinking about what I want to cook tonight - I've got pork chops for something but I really don't like pork chops. I think I'll freeze them and make pancakes and other breakfasty things instead.

    Chili tomorrow, though. And I might make something fancy for breakfast on Sunday.
