It's cool and rainy here in Texas, so I made chili and cornbread. For dessert, I made apple crisp. Fiancé goes back out of state on Sunday for a month, so trying to get him a few more homemade meals before he goes.
We had steak, mashed potatoes and carrots. It seems like ages since we've sat down together for a meal! SO even helped load the dishwasher so it was all win except for the smoke detector going off...
ETA: He also cooked dinner, so the dishwasher was the bonus! lol

I never really use recipes, but this is what I do:
I bread the pork chops in flower and then egg and then breadcrumbs. I make sure to season the breadcrumbs with grated parm, italian seasoning, salt and pepper, and garlic powder.
Bake for about 30 min at 350 (or until no longer pink in the middle). Super easy!
All your dinners sound delicious! I am feeling lazy. I'm thinking about ordering Chinese. Or wine and popcorn with a slice of wedding cake (screw saving cake for a year, I want it now!).
It was going to be chicken cordon bleu, but I'm so tired from work and planning this baby shower that I picked up a fresh made pizza when I was at the store tonight.

@Denise40 Larb is chicken/pork/beef (pick one), minced, and seasoned with lime juice, red pepper flake, and red onion/shallots. It is very simple, but the flavor is incredible. At the restaurant, it comes with plain white rice, but DH loves the sticky kind, so I make plain white sticky rice.
@sarawifenow I guess I use the term "recipe" loosely. I don't actually measure anything. Everything is done by sight and then I taste and adjust until I get the flavor I want. I read like 4 different recipes for each, then kind of discarded the parts I didn't like and cherry picked the process I could pull off. I can probably come up with something for you though. Probably later today when I get some time at work.
Due to my stomach surgery in September, I'm on a very restricted diet for the forseeable future. It's a challenge coming up with new things so I don't get bored. Last night was a ramekin of noodle-free tuna casserole with some finely chopped mushrooms and onions, and a topping of crushed crackers and crushed canned french fried onions mixed together, that crisped up nicely in the oven. A few spoonfuls of cottage cheese on the side. I have another ramekin ready to bake for dinner tonight.
Lunch today is a Key Lime greek yogurt and some hummus.
