  • I have not cooked a single thing since our wedding...unless you count microwaving popcorn and pouring wine as cooking. My excuse was that I deserved time off to be lazy. But it's been 10 days now. I think I need to get back on the cooking horse!

    I cut the amount of cheese in half and added shredded chicken. They were amazing! I'm really excited to make them again and SO really loves them.

    Tomorrow is my youngest's birthday, so cake baking today.

    In our house, you get to choose whatever you want for your birthday dinner. So I ask what he wants. Get this. Cinghiale ragu and pappardelle. 
    WTF, Moosey. Really?
    The pappardelle part is easy enough. I can make pasta with my eyes closed.
    The cinghiale....I don't have a frikking clue. Where the hell do I get wild boar? They must sell it, someplace. 
    I wonder if I could use a beef chuck roast and fool him. Probably not. He's the kind of kid that at ten, looked at me and said, "I think Grandma used frozen crab in the manicotti," and was right. I handed him a piece of cheap mozzarella when he was seven, (trying to save money) and he took a bite, handed it back, and said, "What was that?"
    Damn it, Moose. 
    Has anybody ever cooked wild boar? Where do you find this? And don't say in the woods. There are enough smartasses in my life.

    I'm making soup with the bone from a ham I made over the weekend. I think it will have stuff like carrots, celery, onions, and beans but I'm a bit undecided. I'm feeling incredibly uninspired but hate to throw away such beautiful bones.

    Good idea!  I never think to make soup, but that would be perfect for the weather and fairly easy!!!!!
  • Whole Foods buffet line. DH is out of town, I just got back IN town, and the fridge is almost completely empty. Plus their Mac and cheese is crack.

  • We have a chili cook off at work tomorrow. It's my first cook off at the new job, and let me just say... the gauntlet has been thrown.

    I'm making both a white chili and my five-alarm fire-roasted chili tonight. I'm going to make big batches of both so we have left overs. So I'll be eating one of those for the next week.

    Here are two recipes that are good and can be modified quite simply.



    In regards to finding wild boar, I know that if I ask my butcher ahead of time, he can get me a piece of it. Perhaps you have a speciality meat shop in your area? But, if you have never worked with it before - be prepared - it has quite the interesting aroma :P


    Is it stinky? I've never ever cooked it. To me, it's always been a restaurant thing. Ack.

    I found it. That's the good news. I can't afford it, to be honest. It has to be pre ordered, minimum order of 5 pounds, and holy crap. The cheapest cuts are ranging from 10 to 15 per pound.
    (It's just about Moosey's favorite thing to order, out to dinner. )

    At the price, I think I could just take him out for it. There's a place downtown he loves, and he seriously hero worships the owner. If he got a birthday hug from the Signore it would please him as much as the food. They are both tremendous huggers. They both get teary eyed about food. I wouldn't have to stress over wild boar. 

    This sounds like a win/win. 
  • I think I figured it out. Gonna stuff some chicken with spinach, apples, and white cheddar, season with pumpkin pie spice and Hungarian paprika and bake, serve with maple roasted acorn squash. That'll do.

    It's raining. And supposed to turn to snow.

  • @lolo883 quinoa seems like it's a sort of alternative to rice. I eat high protein foods and try to stay away from starches or higher carb counts (like white rice), and quinoa is a good alternative. I will warn you, if you haven't had it, to make it in chicken broth or veggie broth. It's very meh and plain w/o it. Or maybe a seasoning of some sort. I typically cook it in my rice cooker in chicken broth. It definitely isn't rice, but it will tide me over when I want rice (and being half Asian, I love my rice).

    Ohhh gotcha! Yeah, I find it to be a bit "crunchy" even after cooking it in a rice cooker. I wonder if I am not adding enough liquid.

  • It's actually leftovers from what I made last night- but a pumpkin soup w/ bacon and Parmesan and a spinach salad w/ artichokes, campari tomatoes, and zucchini! 
  • DH is making some sort of pomegranate sake chicken with roasted green beans. 

     He had me at sake.

    I made FI some of those nacho cheese flavored tacos. He usually gets tacos when I eat a burrito for dinner but I decided to be good today and not get one, now he's asking if I feel alright lol

  • I had to commute to another office today, which is closer to Philly (my office is closer to NYC). It took almost 2 hours to get home, so I just reheated sliders I made over the weekend. With fresh tomato, sweet onion and roasted garlic jam, pickles, and aged English cheddar on potato rolls. Yea, DH is a happy, happy man tonight.
