I don't like summer squash, but I do what EssTee does with butternut squash. MMMMMMM.
Butternut squash is my favorite, and soup is very easy! Just roast it up and puree and done. We canned some this summer so we've been finding all sorts of ways to use it, just do a search and you'll find lots of ways. IMO it's great for fall flavors, if there is such a thing? My recent favorite was butternut squash stuffed shells! On a side note, someone brought butternut squash pie to work, it's very close pumpkin pie. I also would try spaghetti squash as a pasta sub. I haven't done too much with this but they few times I've tried it it's been pretty good.

First-with butternut squash-buy the peeled or cubed ones. It is worth the price markup. I have nearly lost so many fingers trying to peel and cut whole butternut squash. The simplest way to cook it is to cut it into small cubes, toss with olive oil, cinnamon, and a bit of nutmeg, spread it evenly a baking sheet with aluminum foil and roast at 400 degrees for about 40 minutes (until it's soft).
I really want to go buy some butternut squash TAHDAY and see what it's all about. But I work late tonight, and tomorrow is my dad's bday so we'll go out for dinner. Maybe on Friday though!!!
Roast that shit. All kinds of squash. Toss it in some olive oil, sprinkle on some seasonings, throw that shit in a hot oven. You can do garlic and parmesan, brown sugar and maple syrup, whatever. It's always delicious.

Zucchini's a squash too, though pretty similar in taste to summer/yellow squash. I am a big fan of stuffed zucchini. You can basically make any sort of ground meat filling you want and stuff it in a zucchini, instead of using pasta or rice or another carb
Oh I LOVE spaghetti squash! Cut it in half lengthwise (if it's too hard, pierce the skin several times and microwave it for a few minutes), scoop out the seeds, roast it cut side down in a large baking dish with about an inch of water at 400 degrees for 40ish minutes, then scoop out the spaghetti-like strands. Drain it for a while, otherwise things get watery. I think it goes great with red sauces or pesto, and FI really likes it too.
We have summer squash and zucchini often, totally agree summer squash is great.

I usually have a big pile of it with a grilled steak and some broccoli.
FI doesn't eat zucchini. I really would have a mutiny if I cooked that and tried to serve it haha. I'll save those recipes though in case I'm ever doing dinner alone!

I usually use it as a side dish (unless is spaghetti squash, then it sometimes just substitutes for pasta or rice). My H is not a huge plain squash fan, but he'll eat anything if I tell him it's mashed potatoes - so a lot of times i'll boil squash with a small potato or two and then mash it with a little butter and salt. YUM.

Then I brown Italian sausage (the bulk kind) and put it in the squash. Cover with marinara and then lots of mozarella and bake until the cheese is melty.
DH doesn't like squash, but he'll eat it if I cut it up and put it into soup. I also have one of those spiral slicers and make "pasta" out of it. I've also used sliced zucchini as the "pasta" in lasagna. Delish.
Count me in for the butternut squash deliciousness. FI makes an AHMAHZING soup with it using some sage and pretty much what everyone else said. Toss it with some olive oil and spices, roast it, and puree the shit out of it. He makes a big stock pot worth and freezes it so I can eat all of it while he's out of town.
We've also thickened some up a bit and put a thin layer on a plate topped with sautéed scallops. Sounds weird but it was awesome.
Now I'm off to make some of those butternut squash enchiladas a few PPs posted.
It's a lasagna with ground turkey and spinach lasagna with a roasted garlic butternut squash sauce. It is so amazing. My tips are: make sure the top of every clove of garlic is cut off-I missed some and squeezing out the roasted flesh was a PITA. And next time I will add the spinach into the ground turkey mixture and wilt it a bit, it was kind of odd just layered raw into the lasagna. I would have preferred it wilted slightly, also that way you can fit more in the pain.

DH apparently thinks squash is slimy, and he doesn't like slimy foods (asparagus, mushrooms, squash, etc.) But as long as I change the texture of the food with coatings or cooking techniques, he's cool. It's usually easiest to throw stuff in soups and stews for him, but he's now discovered tempura makes everything edible!
