Any good food plans this week?
Tonight I am making Spanish rice and roasting some Chorizo to go along with it. I think I'll whip up a batch of Margaritas and maybe grab some chips and guac on the way home.
Tomorrow I have no freaking idea. I have some pork chops in the freezer. Maybe parmesan crusted pork chops? Any suggestions?
Thursday my bff is coming over for a movie night, so I will make us some salmon because it is her favorite. I like to do a herb crusted salmon and then roast it. Serve with some roasted cauliflower. Yum!
Friday another one of my friends is meeting me at my office so we can go to happy hour, so I won't cook that night.

Tonight I'm working out with my trainer from 7-8, and I hate eating soon before I work out, so it'll prob just be a lean cuisine.
Tomorrow night, one of my BMs is coming over and we're gonna cook something, but we don't know what yet. Maybe seabass. I'll have to see what the grocery store has.
I'm not sure on Thursday, either - FI said he might want to go out, but I think that's stupid because we're going to NYC this weekend, and I don't want to waste money on dinner on Thursday night if we're going to be eating out most of the weekend

This recipe that I sort of just invented. I used to buy the Philadelphia cooking cream for this and then it went away (at all the grocery stores around here anyways). So I figured out how to basically make my own version of it.
So I bake 4 pork chops in the oven. Cook a box of bow tie pasta on the stove. In a large skillet, sautee butter, garlic, and head of chopped spinach. Then I put on low and add an entire container of sour cream plus a little lemon, cracked pepper, and lots of Italian spices. Mix around until the sour cream is all melty and saucy. When the pork chops are done, I cut them into bite size and mix into the sauce. Serve it over the noodles.
