What's for dinner tonight?

I was a real crab apple last night so I'm making keilbasa for FI along with a mushroom leek quinoa. The real apology is the brie platter I made for the dinner table. Apologies for the crappy sideways cell phone photo but there are THREE KINDS OF BRIE ON THIS PLATE.

I hope it lasts until he gets home.

No promises on that.

  • We had crock pot roasted chicken with baked sweet potatoes and creamed spinach. Bones are back in the pot making stock now, and H is doing the dishes while I watch Jeopardy.

  • I made mini-meatballs in the crock pot.    DH is cooking up some angel hair pasta for me right now.  Add a baguette and I've got dinner.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • I WANT ALL OF THAT.

    Not sure for our dinner yet...does anybody have any fast, easy crock pot suggestions? I need to throw something together between my run and then going to the climbing gym.

  • Was going to be leftovers, but DH is stuck at work so I think I'm gonna make me some California Pan Scrambler (eggs, hashbrowns, veggies cheese).  Usually a breakfast go to for me, but I'll take it.  

  • Salmon, roasted broccoli, and roasted sweet potatoes. 

    Back on track and it's effing harrrrd to not eat cake.

    We did turkey burgers with lettuce wraps

     for buns (trying to be good!) with roasted sweet potatoes!

  • Pork roast, roasted carrots and parsnips (for me) and spinach pesto with pasta (for H). Stupid H doesn't like parsnips.

    I defrosted some pork chops and pounded them super thin, breaded, and fried. I used the spiralizer to make long shreds of zucchini and carrots, which I stir-fried with snow peas, onions, ginger, and a tasty brown sauce. And rice. Because I cannot go more than a couple of days without rice.

    I just started using my spiralizer yesterday and I LOVE it! That sounds so delicious!

    By the way @DaniBites mushroom leek quinoa sounds awesome. I need your recipe, for whenever I feel like getting off my lazy butt and cooking.

    Oh if you're as lazy as I am you'll love it @redheadbride15‌. I'm cooking it right now and I'm a solid tipsy playing with my phone. Just saute garlic, leeks and whatever mushrooms you fancy in evoo, add quinoa, cook and season. I'm adding a little parmesan to make it like a risotto!

  • I have a dumb question for you good cooks @lolo883 @lyndausvi
    I bake or grill every meat, I don't do meat in a skillet unless it's like bite size/ stir fry. So I just pinned a recipe which states to "brown" pork chops in a skillet then they actually cook in the oven for an hour. What does"brown" mean exactly? Do I need oil in the pan? High heat? How long?

    You are searing the pork with oil or butter in a skillet and then pop it in the oven.

    Yep, heat a tablespoon or two of olive oil in the skillet over medium high heat, throw in the meat (preferably room temp and patted dry), cook for two minutes per side without moving it around.

  • Last night we did beef and broccoli stir fry over chow mein noodles and it was amazeballs. And it was a weight watchers recipe, and even my FI loved it. Massive success. He called me today after he ate the leftovers for lunch to reiterate his enthusiasm

    Last night I made Spinach Lasagna Rolls. (Pic).



    Tonight I made a Tortellini bake, but with ravioli, because they didn't have the right kind of tortallini at the store.
