Made My First Crockpot Meal

Last night I got everything together to throw Chicken Enchilada soup into the crock pot for dinner tonight. This is the first time I have ever done it and I decided to try after hearing how all of you do it all the time so, thanks!

It's a skinnytast recipe and it smelled good this morning when I left it so, hoping it goes well!

Good morning and I hope you all have a great week!

  • That sounds delicious and way better than the chicken tortilla soup that has been requested by the trick or treat squad who shall be invading my house on Wednesday.  (Mine is all canned crap)
  • that looks awesome!  I really need to get my crockpot out of storage, there are a million soups/stews/chilis and meals I want to make in it now that the weather is getting cool here.
  • I am doing a three bean turkey chilli for later in the week. My friend tried to get me to register for the more advanced crockpot and I said no, I don't need that. I ended up getting just a basic one and now I wish I had listened to her.

  • That soup is freaking delicious.  I've made it a few times now.  I left out the cilantro, because I don't like it, but otherwise followed it pretty close and it turned out great.
  • Hey Gurl. We just finished dinner. It was delicious. I love cilantro so I loaded up on it, but left out the cumino cause I don't like that. I am excited to try more of the skinnytaste recipes.

  • I've tried 7 or 8 of them and haven't had a bad one yet.  The tuna noodle casserole and the brocolli cheddar soup are my favorites.

  • Yum!! I love my crockpot!! The best thing I make is chicken and dumplings, it is so amazing!!! Left over for days which are just as good!

I love this recipe.  I substitue the regular diced tomatoes with Rotel, just gives it some extra spice & flavor.  Yum.
