I'm working a regular full-time shift next week, so I wanted to think about preparing my lunches and breakfasts. I usually just work a 5 hour shift so I don't get lunch breaks, but I've been super good about bringing a snack with me to keep me satiated during my break. Plus I've been good at eating breakfast.

Plus DH usually does the grocery shopping, so if I don't have to buy lunch then I get to use that money on other things (new shoes!). So it really encourages me even more to plan ahead and bring lunch.

Breakfast (pick 1):
Piece of Fruit
Yogurt

Lunch (pick 1):
Cucumber and cream cheese sandwich
tuna salad sandwich
Egg salad sandwich
Salad (various mix of: lettuce, cherry tomatoes, avocado, diced cucumber, diced HB egg, cheese, chickpeas)
PBJ

Lunch Snack (pick 2):
HB egg
Fruit bar
Fruit
Cheese and crackers (Wheat Thins + 2 slices cheddar)
Yogurt
Chickpea salad (chickpeas, cherry tomatoes, avocado, EVOO, S&P, herbs)
Cucumber/red pepper and cream cheese/hummus/ranch dip/PB/whatever I've got that dippy

    I semi-meall plan on days DH works.   I always make sure I have proteins in the freezer and veggies around.   I make batches of meatball and sauce and pulled pork to freeze.   

     It's a total free for all when DH is off work.   Although I can normally get him to commit to at least 1 meal during his 3 night off while we are shopping.

    I work from home, so breakfast and lunch is pretty much what ever is around the house.  I keep things like tuna fish, eggs, bread and soup around to eat.  Sometimes I will buy makings for a salad and pre make them (minus the dressing) on Sunday so I can just grab and go (all the way down the stairs to my office).






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • well done! BF and do what we call "epic cooking" every Sunday. We pick 3 dishes, write a shopping list, follow the list and spend Sunday cooking. We divide the dishes up on single serve Tupperware and we have lunch and dinner for the week. Qe have discovered that we 1) eat healthier and 2) save a lot of money on groceries.

    We cook big portions of each recipe. I live it because during the weekday I am too tired to cook after work, I can simply heat up a great homemade dish.
