i'm probably going to regret this. . . but dinner?

What is everyone having for dinner?  DH is on trial, so running around crazy, and I have a slow day so I want to make something nice for him after work.  Requirements: must be at least a bit healthy and include a vegetable.  Also, no shrimp or coconut!

I am already hungry for lunch and it's only 11:10, so I know I am going to regret posting this in 3, 2, 1....

  • Well I don't know exactly what I'm having. Either leftover macaroni and meat sauce I made last night, or we might go out to this new restaurant that I want to check out. I sadly didn't include a vegetable in last night's meal, but if I hadn't been too lazy I probably would have steamed some broccoli. But the meat sauce turned out great. I use a can of crushed tomatoes, a can of tomato paste, ground sirloin, liberal Italian seasoning, and as much red cooking wine as I feel is necessary. Delish.

  • I usually end up making pasta on Tuesdays right before 19 Kids and Counting comes on.

    Maybe I'll just eat the pasta salad I made yesterday if it ends up being too hot to boil water! There's broccoli in it!

  • Either chicken marsala or rice spaghetti pasta with chicken meatballs. I haven't decided.

    I'm thinking of trying this with a nice quinoa salad on the side. I've never made them before myself, so no promises as to if they're any good, haha.

    Sounds awesome and it's a weight watchers recipe. I'm eating close to nothing all day to save points for dinner.

  • FI is out of town so I won't be doing anything too fancy. Probably a stirfry with red peppers, onions, broccolini, and portobellos. Usually cook it in a sauce made with garlic, ginger, thyme, oyster sauce and rice wine vinegar amongst other things.

  • Crockpot chicken tacos for us. Threw some chicken breasts, salsa, and black beans in the crockpot this morning. We planned out our meals for this week (hooray for being real adults) and I'm proud of myself for actually remembering to throw everything in the crockpot this morning, rather than getting halfway to work and realizing I had failed. All I'll have to do when I get home is chop up a tomato, an avocado and some lettuce and we're good to go!

    Crockpot chicken fajitas, corn and black beans for sides. I ate like garbage at a baseball game last night so I'll probably skip the tortillas on mine.

    Hmm, last night I made an apple, honey and bacon chutney and put that over a nice grilled pork tenderloin with grilled asparagus.  It was YUMM the chutney came out great.

  • Stouffer's Lasagna with some broccoli and five cheese bread.

    Winn Dixie had a "Buy two of these things for $15, get all this other shit free" deal. So I bought two lasagnas and got all the other shit free. We will likely eat it all tonight. 

    I will be very glad when I am buying groceries for me and FI and not me and FI and Mom and Dad and Sister and whoever else pops in. Food will go so much longer.

    • 1/2 tsp table salt   
    • 1/4 tsp black pepper, freshly ground   
    • 1 medium uncooked shallot(s), sliced   
    • 2 clove(s) (medium) garlic clove(s), sliced   
    •   1 1/2 cup(s) cremini mushroom(s), (1/4 pound) fresh white mushrooms, sliced   
    • 1 1/2 fl oz sweet dessert wine, Madeira wine   
    •   1/2 cup(s) reduced-sodium chicken broth   
    • 1 oz roquefort cheese, crumbled

    Instructions

    • Place the pork slices between 2 pieces of wax paper and pound with a wooden mallet or heavy can to a 1/2-inch thickness.

    • Spray a medium nonstick skillet with nonstick spray and set over medium-high heat. Sprinkle the pork with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper, then add to the skillet. Cook the pork until browned and cooked through, 2–3 minutes on each side. Transfer to a plate and keep warm.

    • Add the shallot, garlic, mushrooms, and remaining 1/4 teaspoon salt and 1/8 teaspoon pepper to the skillet. Cook, stirring frequently, until the mushrooms begin to soften, about 3 minutes. Add the wine, scraping up any browned bits from the bottom of the skillet. Cook until the liquid completely evaporates and the mushrooms begin to brown, 3 – 4 minutes longer. Add the broth and cook about 2 minutes. Add the cheese, reserved pork, and any pork juice on plate; cook, stirring frequently, until the cheese just melts, about 1 minute. Remove the skillet from the heat and serve at once. Yields 2 pieces pork, 1/3 cup mushroom mixture per serving. 

    I've never made it before but we have pork and mushrooms and H is always looking for a reason to buy cheese.

  • After work I'm heading straight to SO's school. The high school band has their spring concert tonight. He teaches in a small town where the dining options are basically fast food and nothing else, so I just picked up some salads from the grocery store deli on my lunch break since we haven't been eating well for the past couple of weeks.

    Tomorrow, chicken marsala and zucchini if I get to cook at home. But I have a feeling his brother will want us to go out, which will make me feel fat and crabby.

  • We were invited to DH's boss's house for a dinner party to welcome the new GM.       Dinner is whatever DH is cooking.   Yep, DH and one of his guys are doing the cooking.  I heard there will be some filet, lamb and some sort of veggies off the grill.

    DH's boss is also the sommelier for the club.  I except some nice wine too.   Yep, I'm going to be THAT guest who has expecations.   sorrynotsorry






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • I bought sweet corn to make tonight but then when H went to work he said he was going to eat the leftover tacos (there's like, 1, he eats like, 3) So I'm confused.

    I also want coconut shrimp.

  • I'm making egg foo yung. Not very exciting but I've wanted greasy Chinese-ish lately and it's less unhealthy if I make it myself. I may make fried rice on the side. It depends on how lazy I'm feeling.

    We are having Chicken Valorosso.  Never made it before, but looks good.  We just recently moved in with my parents and they requested I make it so I'm giving it a shot.

  • I'm going to the movies, so I'll be eating popcorn and maybe some pretzel nuggets with pump cheese. That's a well balanced healthy dinner, right?? I'll have "dairy" with my extra butter too! And a giant soda.

  • I forsee frozen pizza. My car is in the shop and I have to drive 45 min to the dealer this afternoon to pick it up. That means on the way home, I'll be stuck in rush hour traffic.
