  • So jealous of everyone's dinners! H and I pretty much hate cooking so our dinners are usually pretty boring. Tonight we're doing BLTs (with avocado if I can find a ripe one at the store) and some sort of side. Tomorrow night I'll probably do hummus crusted chicken and zucchini and Friday night is baked ziti - that'll be enough to feed us dinner that night and lunches over the weekend.

    I'm in Phoenix, I see a tamale lady and corn cart at least once a day.

    jealous!  i'd be all over a tamale cart!!!!!!


    Oh whah-whah, I want tamales NOW. The biggest down-side to living in New England = terrible, no-good Tex-Mex food :(


    Preach! Headed to New Orleans tonight. Will be hitting up the tamale cart in Walgreens parking lot tomorrow!

  • @emmaaa BLTs with avocado are SO good. H got one with avocado on it a few months ago when we were out to lunch and I've made it a standard now.

    @kaos16 so have I! I figured Friday night would be perfect to make it since it won't be terribly hot here (so having the oven going won't be awful) and it'll feed us for the whole weekend.

    It's an amazingly easy recipe that I found forever ago on Pinterest (and have shared it here before). Basically you chop up zucchini and yellow squash, layer it in the bottom of a casserole dish, place chicken breasts on top of the veggies, spread each breast with a layer of hummus, squeeze some fresh lemon juice on top and bake. CLICK for the link to the whole recipe.  
  • I love hearing about everyone's dinners. Last night was farfalla with ground sausage, sauteed asparagus, cherry tomatoes, onion, and zucchini.

     

    Tonight I have a chuck roast in the crock pot with onion, diced tomato, and a can of cream of mushroom soup. I'll make some rice to go with it and then roast the rest of the asparagus that I bought at the farmer's market last weekend.

  • Last night H grilled chicken thighs and asparagus and I mad mac & cheese from a box to go with it because I'd been craving it. 

    For tonight, there is a pork shoulder being slow-roasted as we speak (this is hour 5). Don't know what sides we're doing yet, but tomorrow is pulled pork sandwiches with BBQ sauce (leftovers).

  • @novella1186 mmm chicken thighs on the grill are so good. I made them a couple of months ago that way, but wrapped in bacon and seasoned with chipotle powder. H could not get enough. I'll need to put them on the menu again for next week.

    Oh man that sounds awesome! I like when H does a dry rub with cumin, garlic powder, salt and pepper. It's super simple but so delicious, especially when the skin is all crispy.

  • My turkey turned out great.  I had a turkey sandwich with the left-overs.

    Tonight I decide to go with seared tuna, rice, mixed veggies tossed in island teriyaki sauce.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

  • We went out for burgers tonight.  We won movie passes to Ted 2 so went out before heading to see the movie.  It was pretty good actually, unless you're offended by anything.  Then it's not for you
